Chocolate figure casting mold - Instructions
Preparation
For all molds used to cast chocolate figures, preparation is extremely important. Rinse the mold with lukewarm water and a gentle dish soap. This must contain neither lye nor rinse aid, as these would damage the molds. Then rinse away all residues with lukewarm water and dry the mold very thoroughly. From now on, you should not touch the mold directly, otherwise fingerprints will be visible on the chocolate later. Hold the mold by the edge where no chocolate will be poured. Polish the mold with non-fibrous cotton or a very fine tissue.
To make chocolate figures, you should only use high-quality, tempered couverture. Chocolate from the supermarket won't be liquid enough and won't deliver the quality you're aiming for anyway. To temper, a tempering device is best, but you can also use a water bath. Be careful that no water gets into the chocolate. This would make it crumbly and cause it to clump.
Decorating
Now you can start decorating. You can use colored cocoa butter or tempered couverture. You can also color white couverture with fat-soluble powder colors for chocolate. For a beige color, mix 1/3 milk couverture with 2/3 white couverture. Both couverturas must be tempered and should not be mixed for too long, otherwise they will cool down significantly.
Take the tempered couverture or some melted cocoa butter and start with the outermost layer. Chocolate molds must be painted from outside to inside, which means what you paint first will be visible from the outside later. You can apply the mixture best with a fine brush, a sponge or by hand. It's important that all materials are clean, dry and grease-free. If you want to draw a pattern with your fingers, you must absolutely wear plastic gloves. Otherwise your fingerprints will be visible later. Once the couverture or cocoa butter has slightly dried, apply the next layer. This is how you work your way inward. While decorating, you can occasionally turn your mold over. This way you can see what your finished product will look like.
Casting and finishing the mold
Once you're satisfied with all the colored details, let everything dry slightly. Then take a larger brush. Now brush the entire mold with couverture. Use the couverture that your product will ultimately have predominantly. Turn the mold over again and again here. There should be no air bubbles visible, as these would otherwise be visible as holes in the finished mold. A metal horn is used to clear the surface of the mold from chocolate. Then you stack the mold halves together and secure them well with the supplied clips. Once you're sure the halves won't slip, you can fill the mold completely with couverture. A soup ladle works best for this. Use the handle of a spatula to tap against the edge of the mold so any air bubbles rise up.
Then you turn the mold over your couverture bowl, continue tapping the edge with the spatula and wait until the excess couverture has run out. If you notice that the wall that has formed is a bit too thin, simply repeat the filling and emptying. Then wipe the lowest drips off with the metal horn and place the mold in the refrigerator for 2-5 minutes.
Meanwhile, you can prepare the base of the mold. On clean parchment paper, spread a little couverture. Press the chilled mold well into it. So the mold and parchment paper go together into the refrigerator for another 10-15 minutes and after removing the clips for the same length of time. Then take the mold out of the refrigerator, break off the excess base and remove the figure from the mold. To do this, carefully insert a spatula into the gap between the mold halves and move it slightly. Be careful, the molds separate easily and the figure shouldn't fall off or get damaged by the spatula. Your chocolate figure can now be decorated with fondant, sugar decoration or similar and then beautifully packaged.
