These savoury Chäschüächli are perfect for any apéro. The little cakes are quick to make and are hugely popular with young and old alike. Thanks to the perforated silicone mat, your Chäschüächli bake especially evenly and turn out really nice and crispy. Instead of grated cheese, you can also make the small cakes in other flavours – with spinach, leek, vegetables, bacon, onions or mushrooms. I wish you lots of fun baking!

Shortcrust pastry
1
Combine the dough and chill for 30 minutes
For the dough, cut the cold butter into cubes and add the flour and salt. Rub everything together with your hands until the butter is no longer recognisable. Finally add the cold water and mix everything into a dough. Wrap the finished pastry in cling film and place it in the fridge for 30 minutes. Then preheat the oven to 200 °C fan.

2
Roll out to 3 mm and cut out circles
After 30 minutes you can take the pastry out of the fridge and roll it out to a thickness of 3 mm using the rolling guides. For this recipe we used the perforated silicone mat with Ø 6.5 cm – for that you need a fluted, round cookie cutter with Ø 9 cm. The Chäschüächli can be made in all sorts of sizes, though; the perforated silicone mat comes in many diameters.

This is what you need for it
3
Place the pastry circles in the baking mat
You can easily cut the perforated silicone mat in half with scissors so that the mats have enough room on two household baking trays. Thanks to the many small holes in the mat, your bakes turn out nice and even and crispier. Now place the cut-out pastry circles into the moulds and press the dough into the shape.
Prick the base of each individual small cake lightly with a fork so that it doesn't puff up during baking.

Filling, custard and baking
1
Prepare the custard
For the custard, first put the eggs together with the wheat starch into a bowl and stir everything until no more lumps are visible. Then add all the remaining ingredients. At the end, be sure to taste a little of the custard and season it a bit more if needed.

2
Fill with Gruyère and custard and bake
Now you can fill each of your small cakes with 10 g of grated Gruyère and season with a little pepper. Alternatively, other savoury fillings work too – for example spinach-bacon, vegetables, leek-ham, onion-bacon or spinach-mushroom. Or you can bake sweet tarts with fresh berries and fruit.
Place both your baking mats on a baking tray lined with baking paper before you start filling. Pour the custard into each individual small cake using a one-litre container and make sure that all the cheese is under the custard. Bake the Chäschüächli at 200 °C fan for about 12–15 minutes.

Storage & shelf life
The finished baked Chäschüächli keep for two days in the fridge. The small cakes are also well suited for preparing ahead and freezing: simply freeze them unbaked, but fully filled with filling and custard. Well wrapped, they keep for up to two months in the freezer without any problem. To bake them, take the frozen small cakes straight from the freezer, let them thaw for one hour at room temperature and then bake them at 200 °C for 15 minutes.

So they turn out perfectly every time
The cheese belongs under the custard
When filling, make sure that the grated cheese is completely covered by the custard. Cheese floating on top burns faster than the small cake is baked through – submerged, it melts creamily into the custard.
No Aromat in the house?
Replace the 8 g of Aromat with about 5 g of salt plus a pinch of nutmeg and paprika – or with vegetable bouillon powder. The important thing is tasting at the end: the custard should already taste savoury on its own, as the dough contributes little salt.
Which cheese should it be?
A mature Gruyère gives the classic, robust flavour. It turns milder with Emmental or a blend with Mutschli; if you like it more savoury, mix in some Sbrinz or Appenzeller. The main thing is freshly grated – ready-grated cheese is often dry.
FAQ
Yes, and it's best done unbaked: freeze the small cakes fully filled with cheese and custard, well wrapped – they keep for up to two months this way. To bake, let them thaw for one hour at room temperature and bake at 200 °C for 15 minutes. That way you always have fresh Chäschüächli ready for spontaneous guests.
Yes – a muffin tin or individual tartlet moulds work too. The small cakes just turn out less crispy in them, because the moisture can't escape through the holes; extend the baking time by a few minutes if needed, until the base is golden brown.
During baking, steam forms between the dough and the mat. Without the little holes, the base bulges upwards and pushes the custard over the rim. Pricking lets the steam escape – the base stays nice and flat.
