Tips from our bakery

Figures such as St Nicholas and angels come to life with decoration. Use a dough that holds its shape and let the biscuits cool completely before piping beards, hats and wings with royal icing or glacé icing. The embossed designs press details straight into the dough, while on the plunger cutters the plunger releases the figure cleanly – handy when you need lots of biscuits or are baking with children. Frequently asked questions

When should I bake St Nicholas biscuits?

Gingerbread figures can be baked a few days before 6 December; in a tin they often taste even better. Decorated shortcrust biscuits are best made shortly before, so they stay crisp.
