Gingerbread dough is firm and a little sticky. Roll it out on a light dusting of flour and dip the cutter in flour now and then. Lift large gingerbread men of 13.5 cm and more onto the tray with a palette knife so the arms and legs keep their shape. Gingerbread often tastes even better after a few days in a tin, so plan ahead.
