Description

Eclair Course

Eclairs (French for lightning), as the name suggests, are quick to make and are great as a dessert or even as savoury bites for birthdays, weddings and other events.

If you love delicious, airy and versatile pâtisserie, you don't have to go all the way to France, because we'll show you right here in Adliswil how to make them, fill them with different fillings, glaze them beautifully and decorate them!

To show how versatile and creative choux pastry can be used, you will make mini éclairs, pâte à choux (cream puffs) and sweet swans, which are just waiting to be eaten.

Buttercream Cupcakes

In our course we start with the production of a delicious vanilla cream. Each person makes their own vanilla cream. Each vanilla cream has a different flavour at the end. This results in different fillings for the eclairs, swans and cream puffs. These flavours are available for all participants to choose from at the end, and each participant is allowed to choose and make one of them. All the fillings made will be exchanged among the participants at the end.

Classic vanilla cream

Chocolate cream

Hazelnut cream

Mocca cream

Fruit cream

Champagne cream

Caramel cream

Almond cream

In the course we will make different sweet fillings. However, you will receive a detailed recipe booklet with many different savoury recipe fillings.

Afterwards, the course continues with the production of choux pastry. The course leader will show you what you need to pay attention to when making choux pastry and how to make a perfect dough. You will also learn how the dough can be shaped in different ways and how you can make eclairs, cream puffs or swans. Now it's your turn to make your own choux pastry. Then you can put the dough in the oven.

In the meantime, our course leader will show you how to make a delicious fruit cream without vanilla cream as a base. After this demo, we turn to the now cooled vanilla cream and finish it with different flavours.

Now our ready-baked eclairs, cream puffs and swans are filled with the many different fillings. Then it gets creative! The course leader will show you how to glaze and fillet the eclairs with a special glaze (melted fondant) and how to decorate them with small decorations. You will learn what you need to pay attention to when glazing so that the finished eclairs have a beautiful shine. At the end of the course, all the French delicacies you have made will be safely packaged before you go home with a detailed recipe booklet and lots of new knowledge. We recommend that you enjoy all the products made during the next two days after the course. Because they simply taste best fresh!

CANCELLATION CONDITIONS

Unfortunately, illness, accidents and other unforeseeable situations are part of our everyday lives. As our courses require fixed planning, we calculate and plan material for every registered participant. Changes to bookings and cancellations therefore result in a lot of extra work and lost opportunities for other course participants. In order to remain fair to everyone, we strictly adhere to the information listed below. However, it is important to us as a company to offer you options for unforeseeable situations in order to avoid high costs, which is possible via the Basic participation option or cancellation insurance.

All registrations for our courses are binding. The invoice must be settled by the day of the course, taking into account the payment deadline or in the case of bookings at short notice. Further details can be found in the terms and conditions at minischoggi.ch. miniSchoggi reserves the right to cancel courses due to insufficient demand and without giving further reasons up to 5 days before the start of the course. In such a case, the participant has the option of taking part in another course or reclaiming any payments already made in full.

Courses that take place on site

If you are unable to attend a course or no longer wish to participate, a distinction is made between rebooking to another date and cancellation. Please note that a course booking can never be rebooked or cancelled free of charge without purchasing the Basic participation option. Further details on the recommended Basic participation option can be found in the relevant section. You have the option of transferring your booked place to another person at any time.

Rebooking: Participants may rebook their course participation up to 30 days before the start of the course, subject to a processing fee of CHF 20. If the participant rebooks the course at a later date, 50% of the course fee will be charged. Rebooking later than 48 hours before the start of the course is not possible and will be charged as a cancellation. The fee applies per booked course place.

Cancellation: Cancellation of course participation by the participant is possible up to 30 days before the start of the course, whereby a processing fee of CHF 50 will be charged. Thereafter, the participant is no longer entitled to a place on the course. If the participant cancels the course at a later date or does not turn up on the day of the course, 100% of the course fee will be charged. The fee applies per course place.

What happens in the event of illness or an accident if I do NOT have a Basic participation option?

Unfortunately, situations arise in life that make it impossible to attend a planned course. Be it a sudden illness, severe flu or even an accident. We at miniSchoggi very much regret such an event, as we would of course prefer to welcome all those registered to the course.

However, the course costs are still due in all situations because we are usually unable to sell the booked place in the extremely short time until the start of the course and have already incurred various costs in connection with the booking and course preparation. Even with the best will in the world, we cannot bear these individual risk costs of a single person ourselves. We therefore recommend booking a voluntary Basic participation option. Thank you for your understanding.

Basic participation option for course booking

The Basic participation option for courses is the ideal supplement to course bookings and should not be omitted. This way you can ensure that even in the event of many unforeseen incidents such as illness, accident, corona infection, death or funeral of a family member, pregnancy complications, etc. (exact list and details below in the link), course participation on a later date is possible at no additional cost.

The Basic participation option is not compulsory and can be purchased voluntarily together with the course. If you do not purchase it, the normal course and cancellation conditions apply. You can find more information about the participation option at www.minischoggi.ch/gb/participation-options

Please note that external costs (hotel accommodation, travel costs, etc.) are never covered by the Basic participation option. To cover these costs, we recommend taking out cancellation insurance, which usually has certain overlaps with the Basic participation option, but often includes deductibles or major restrictions. Depending on the insurance, however, external costs may already be included in your travel insurance. You can find more information on cancellation insurance at: www.minischoggi.ch/insurance

Questions? We are here for you!

Do you have any questions or is something not clear? Then we will be happy to help you by phone on 044 480 14 14 or by e-mail at info@minischoggi.ch.

Please note, however, that we cannot make any further recommendations regarding insurance or existing private insurance policies. Each person must decide for themselves what risk they wish to take and what it is worth to them. Thank you for your understanding.

We look forward to welcoming you to the course soon! Your miniSchoggi team
