Pralines Basic Course

We'll make you a confectioner!

Learn how to create melt-in-the-mouth truffles & pralines and skilfully turn them into little masterpieces in the praline course at miniSchoggi.

Alongside our chocolatiers, we will show you how to professionally prepare a fresh caramel refined with fleur de sel and a creamy ganache. The prepared dark ganache will later be used to fill the dried apricots.

Due to time constraints, another five praline fillings will be prepared for you by our chocolatiers before the course so that you can make many different creations on the course without time pressure.

There is a choice of 7 different praline fillings:

Creamy hazelnut filling

Caramel filling with fleur du sel

Refreshing mango filling

Sparkling champagne filling

Dark chocolate filling

Classic vanilla filling with bourbon vanilla

Filled apricots with ganache

The caramel filling and the dark ganache for the apricots will both be demonstrated in the course by our course leader. After making the praline fillings, you will enjoy a professional chocolate tasting. Can you taste the difference? Our course leader will show you how varied chocolate can taste.

You can make pralines in two different ways: With pre-cast hollow praline bodies and hollow spheres or with praline moulds that you pour yourself. In our course you will get to know both variants and at the end you can decide for yourself which way you would like to make your chocolates at home. As the second option is also the more difficult one, our course leader will show you how to cast a praline mould and how to make your own hollow praline bodies, which will later be filled with a praline filling. You will also learn more about the professional tempering of couverture (theory part). If you would like to learn more about tempering couverture or moulding your own praline shells, we recommend that you attend our couverture tempering course or our airbrush praline course.

Chocolates - Filling & Decorating

Next, you will learn how to expertly fill pralines and truffles with various fillings and what to look out for in the combinations and filling heights. You can round off and refine the taste of your praline creation with selected ingredients. You can choose from ingredients such as z.B. caramelised hazelnuts, pink pepper, coconut shavings, roasted almonds, cocoa nibs, fleur de sel or freeze-dried strawberries and raspberries.

In a further step, you seal the praline cavities and your truffles with liquid couverture. Now comes the most creative part of the course, decorating the chocolates. You have a wide choice of decorations such as: Edible flowers, mini crispy pearls, spices, various sugar decorations, chocolate coffee beans, edible glitter and chocolate tattoos.

Truffles & Apricots

After decorating the chocolates, we seal the truffles with liquid chocolate and coat them with various sprinkling ingredients such as: Cocoa powder, coconut shavings, chocolate chips, chocolate sprinkles or Hüppen flakes.

Then we cut the dried apricots in half and fill them with the freshly made dark ganache. The filled apricots can then be coated in chocolate and dipped in cocoa powder, taken home as they are or eaten immediately.

Chocolates & Truffles - Packaging

At the end of the course, you can pack the homemade truffles and pralines in the elegant praline box and small gift bags provided by us. Participants also receive a recipe booklet (over 50 pages) with our exclusive, in-house praline recipes and detailed instructions.

We run these praline courses in small groups of max. 14 participants, so that all steps can be demonstrated and explained in detail, because the aim of the course is that every participant goes home happy with their homemade pralines and truffles and can also implement the newly learned skills at home without difficulty thanks to our documents.

Number of participants & age

The course is suitable for adults and young people from the age of 12. A maximum of 14 people per course can participate. Please note that participation is only possible for registered persons. Accompanying persons are not allowed in this course.

Catering

Water, coffee & tea are available before and during the course. (You are welcome to bring sandwiches or anything else to eat during the break).

What you take home

Approx. 50 homemade pralines & truffles as well as 7 filled apricots and a detailed recipe booklet with over 50 pages and 20 exclusive recipes for easy making at home.

Diploma

All course participants will receive a course diploma by email after the course.

Discount voucher

All course participants receive a 10% voucher after the course. This can be used in our shop in Adliswil to purchase materials or redeemed in the online shop within one year. Courses or value vouchers are excluded from the discount voucher.

Arrival by public transport:

The station "Sihlau" (350m from Lokal) is easily reached by S4 from the main station within about 15 minutes. After arriving at the station, cross the river and enjoy the idyllic atmosphere along the Sihl. After walking a few metres along Webereistrasse, you will already see the signs for miniSchoggi on the left-hand side on the first floor. Simply take the exit stairs to the first floor and you will be with us in no time.

Arrival by car:

From the village centre of Adliswil, follow Albisstrasse, turn left immediately after the hairdresser "Bucher Hair & Style" and drive over the bridge and turn right. If you are coming from Langnau or Sihltal, turn right at the traffic lights accordingly.

Along the Sihl you will find dozens of parking spaces, which are chargeable from Monday to Friday from 8:00 - 12:00 and 14:00 - 18:00 and cost CHF 1 per hour.

CANCELLATION CONDITIONS

Unfortunately, illness, accidents and other unforeseeable situations are part of our everyday lives. As our courses require fixed planning, we calculate and plan material for every registered participant. Changes to bookings and cancellations therefore result in a lot of extra work and lost opportunities for other course participants. In order to remain fair to everyone, we strictly adhere to the information listed below. However, it is important to us as a company to offer you options for unforeseeable situations in order to avoid high costs, which is possible via the Basic participation option or cancellation insurance.

All registrations for our courses are binding. The invoice must be settled by the day of the course, taking into account the payment deadline or in the case of bookings at short notice. Further details can be found in the terms and conditions at minischoggi.ch. miniSchoggi reserves the right to cancel courses due to insufficient demand and without giving further reasons up to 5 days before the start of the course. In such a case, the participant has the option of taking part in another course or reclaiming any payments already made in full.

Courses that take place on site

If you are unable to attend a course or no longer wish to participate, a distinction is made between rebooking to another date and cancellation. Please note that a course booking can never be rebooked or cancelled free of charge without purchasing the Basic participation option. Further details on the recommended Basic participation option can be found in the relevant section. You have the option of transferring your booked place to another person at any time.

Rebooking: Participants may rebook their course participation up to 30 days before the start of the course, subject to a processing fee of CHF 20. If the participant rebooks the course at a later date, 50% of the course fee will be charged. Rebooking later than 48 hours before the start of the course is not possible and will be charged as a cancellation. The fee applies per booked course place.

Cancellation: Cancellation of course participation by the participant is possible up to 30 days before the start of the course, whereby a processing fee of CHF 50 will be charged. Thereafter, the participant is no longer entitled to a place on the course. If the participant cancels the course at a later date or does not turn up on the day of the course, 100% of the course fee will be charged. The fee applies per course place.

What happens in the event of illness or an accident if I do NOT have a Basic participation option?

Unfortunately, situations arise in life that make it impossible to attend a planned course. Be it a sudden illness, severe flu or even an accident. We at miniSchoggi very much regret such an event, as we would of course prefer to welcome all those registered to the course.

However, the course costs are still due in all situations because we are usually unable to sell the booked place in the extremely short time until the start of the course and have already incurred various costs in connection with the booking and course preparation. Even with the best will in the world, we cannot bear these individual risk costs of a single person ourselves. We therefore recommend booking a voluntary Basic participation option. Thank you for your understanding.

Basic participation option for course booking

The Basic participation option for courses is the ideal supplement to course bookings and should not be omitted. This way you can ensure that even in the event of many unforeseen incidents such as illness, accident, corona infection, death or funeral of a family member, pregnancy complications, etc. (exact list and details below in the link), course participation on a later date is possible at no additional cost.

The Basic participation option is not compulsory and can be purchased voluntarily together with the course. If you do not purchase it, the normal course and cancellation conditions apply. You can find more information about the participation option at www.minischoggi.ch/gb/participation-options

Please note that external costs (hotel accommodation, travel costs, etc.) are never covered by the Basic participation option. To cover these costs, we recommend taking out cancellation insurance, which usually has certain overlaps with the Basic participation option, but often includes deductibles or major restrictions.
