What do I do with the egg white if I only need the yolk? The egg white is too good to throw away, so we have a natural alternative to fresh egg yolk for your delicacies. Pasteurized egg yolk powder is mixed with water and can then be used like fresh egg yolk and, for example, whipped into a mousse. Add 7 g of the powder and 14 g of lukewarm water and mix. This amount is equivalent to one egg yolk.

Pasteurized egg yolk powder 100 g

Have you run out of fresh eggs in the house or don't know what to do with the egg whites? Then egg yolk powder is a welcome alternative to fresh egg yolks. You can easily mix this egg yolk powder with water and use it just like a fresh egg yolk. It can simply be mixed into the mixture, heated or beaten until frothy. The powder can also be used for tiramisu or cake fillings made with raw egg yolk. This way you can reduce the risk of salmonella in your delicacies. 


Pasteurized egg yolk powder - simple, yet delicious and environmentally friendly

Egg yolk powder must be mixed briefly with a little water at the beginning. Use 7 g of powder as a substitute for a fresh egg yolk. Then add twice as much water, in this case 14 g. Mix the powder well using a small whisk and leave the mixture to stand for around 15-20 minutes. This will dissolve any lumps in the powder. Then stir again briefly and the egg yolk can be used again.

The egg yolks can be beaten with a hand mixer until frothy for a particularly creamy egg yolk, for example for tiramisu or cake fillings. Please note that the egg yolk powder is not suitable for making mayonnaise!
