Chocolate mousse
1
Whip the cream until stiff and stir the chocolate powder
For the chocolate cupcakes you'll need 250 g of whipped full cream. Whip it until creamy-stiff and set it aside until further use.
Mix 60 g of the Chocolate cake filling with 50 g water and combine everything with a Whisk. Watch the water temperature: it must not be warmer than 20 degrees.
Prefer a different flavour? Our range also includes raspberry, strawberry and neutral filling – the neutral one in particular is suitable for all kinds of flavour creations. You can also combine two flavours by filling one half of the cupcake with raspberry mousse, for example, and the other with chocolate mousse.

What you'll need for this
2
Fold in the cream in three parts
Now the whipped full cream goes into the chocolate mixture. Fold it into the chocolate mass in three parts and, for the last third, use a Rubber scraper instead of the Whisk.

Finishing
1
Fill the tartelettes and smooth them off
Fill half of the finished Chocolate cream into a Piping bag and use it to fill the 15 chocolate tartelettes. Smooth off the excess cream with a Spatula so you get a nice, smooth surface.

What you'll need for this
2
Pipe rosettes and decorate
Now fit a new Piping bag with the 16 mm Rosette nozzle and fill in the remaining cream. Carefully pipe a nice rosette onto each cupcake. If the cream is too soft, put it in the fridge for a few minutes before piping the rosettes. Finally, decorate the finished cupcakes with fresh fruit and peppermint.

So your chocolate cupcakes are guaranteed to succeed
The 20 degrees are not a detail
Really measure the water temperature: if the water is warmer than 20 degrees, the cake filling sets too quickly and the mousse becomes dense instead of airy. When in doubt, use cold tap water and let it stand briefly.
Two colours in one cupcake
Halve the recipe quantities and stir up a chocolate and a raspberry mousse in parallel. With two piping bags you fill each cupcake half and half – the same effort, double the effect on the dessert plate.
Practising rosettes costs nothing
Pipe the first rosettes onto a piece of baking paper instead of directly onto the cupcake – you simply scrape the practised cream back into the Piping bag. And if the cream gets too soft: a few minutes in the fridge and the rosette holds its shape.
Frequently asked questions
Yes – fully filled, they keep for three days in the fridge. For maximum crispness, fill the tartelettes on the serving day and keep the mousse covered in the fridge until then; stir briefly before piping.
The cake filling contains binders that set too quickly and unevenly at higher temperatures. The result would be a dense, partly lumpy cream. With a maximum of 20 degrees you have time to fold in the cream airily.
Yes – the amount of mousse is enough for 15 cupcakes at 5.3 cm, alternatively for more mini tartelettes (Ø 3.8 cm) or fewer large ones (Ø 7 cm). The rectangular tartelettes work too; light bases are available in all three sizes in the shop.
