Delicious cinnamon stars

Cinnamon stars are probably one of the pastries that really can't be missed at Christmas. They are particularly appealing because of their cinnamon flavour, their soft consistency and their light sweetness. Many people shy away from making cinnamon stars at home, because everyone thinks that it takes a lot of effort to make them. However, in this post we will show you that cinnamon stars are actually quite easy to make. Especially with our great, special cinnamon star cutters, it's really quick and easy!

Cinnamon star dough

Ingredients:

80 g almonds, ground

65 g granulated sugar

15 g egg white

15 g icing sugar

1. 5 g cinnamon

Here's how:

  • Mix the ground almonds, granulated sugar, icing sugar and cinnamon in a bowl.

  • Once everything is well combined, you can add the egg whites, mix with the dry ingredients and knead into a uniform dough.

  • Wrap the dough in cling film and place it in the fridge for about 1 hour.

  • After the cooling time, you can knead the dough again briefly by hand.

  • Now put some granulated sugar on your work surface and roll out the dough to a thickness of 8 mm using rolling pins. To do this, simply place the 3 mm sticks on the 5 mm sticks.

Egg white glaze

Ingredients:

120 g icing sugar

25 g egg white

2 g lemon juice

Here's how:

  • Preheat your oven to 210 °C
  • Using a hand mixer, beat the icing sugar with the egg whites and lemon juice to a thick glaze. This may take a few minutes. You can tell if the icing is the right consistency when you draw a pattern on its surface and it doesn't disappear immediately.

  • Now spread some of the glaze over the entire dough using an angled palette.

  • Now level the surface of the icing with a large spatula by wiping off the excess icing.

  • Dip a cinnamon star cutter into a small bowl of water. Let the water drip off briefly, squeeze the cutter tightly and start cutting out the stars at the edge of the surface.

  • Dip the cutter in the bowl of water before each cutting.

  • Place the finished cinnamon stars on a baking tray lined with baking paper and bake in a preheated oven for 8 minutes.

Dip the cookie cutter in water and let it drip off.

Press the cookie cutter firmly and cut out the star around the edge.

Place the cut out cinnamon star on a baking tray lined with baking paper.

Carefully scrape off the excess icing from the dough scraps.

Knead the dough scraps back together to form a dough.

Add some ground almonds if the dough is too sticky.

  • You can easily reuse the remaining uncut dough.

  • Simply scrape the icing off the dough as best you can with an angled palette and knead it together again.

  • If the dough is a little too soft and sticky, you can knead a few ground almonds into the dough.

  • Then you just have to repeat the previous steps.

    The cinnamon stars will keep for about 1 month. They simply become drier and harder with time. It is best to store them in a Guetzlibox at room temperature.
