Of course, you could also use a cake ring for this, but the result will be uneven and perhaps too thick in a cake ring. The mixture must therefore be baked as evenly as possible. This template is perfect for this. Of course, it can also be used to apply roulade, chocolate, crispy bases or other batters. With this template, you can create crispy Japonais bases with a diameter of Ø 12 cm and a height of 3 cm. This template promises you efficient work and perfect baking results. Recipe for the perfect Japonais base

Thanks to the following recipe, the crispy Japonais base can also be made at home and is sure to succeed. See for yourself and create perfect baked creations: 

The Japonais base can be made a few days before assembling the actual cake. Then simply store the crispy base in a dry place until you are ready to use it. To bake a perfect Japonais base, you need:
10 g sugar (1)
80 g egg whites (approx. from 3 eggs)
65 g sugar (2)
50 g sugar (3)
60 g ground hazelnuts
15 g white flour
This makes 4 Japonais bases of 14 cm each
Preheat the oven to 160 degrees fan. Put the first part of the sugar and the egg whites in a bowl and whisk this mixture. Meanwhile, pour in the sugar (2). Now you should whisk until the egg whites form a stiff peaks. Mix the sugar (3) with the hazelnuts and flour and carefully fold this mixture into the beaten egg whites. It is important that you are really careful, otherwise the volume of the egg whites will be lost and the base will lose its characteristic consistency. Now place a sheet of baking paper on a baking tray. A little tip: Place 4 small Japonais biscuits in each corner of the baking paper. This will prevent the light Japonais base from shifting in the fan oven. Place the template on the baking paper and pour some of the egg white mixture into the middle of the aluminum template and spread the dough with an angled spatula. Now pull the Japonais mixture over the template using the spatula so that the batter is well distributed in the template. You can put the excess mixture back into the bowl and use it for the next Japonais base. Lift off the template and reposition it on the baking paper. Repeat this process until you have no more batter. Now you can bake the bases in the oven for 12 minutes.
The bases are then cooled and stored in a dry place until you want to use them. It is important that the bases are not stacked on top of each other. Also make sure that you do not store the Japonais bases in the fridge or freezer. The bases will keep for up to 2 months. Once you have incorporated the bases into the cake, you can put the whole cake in the fridge or freezer.

Practical, round template

The stencil can be used in a variety of ways. For example, roulade cakes are also very easy to make. Traditionally, a roulade is spread thinly over the entire tray with a spatula and then baked in layers. Here too, working with the aluminum template ensures precise bases that are baked evenly. This creates beautiful round roulade bases that can be layered to form a cake. A classic example of a roulade cake is the Hungarian Dobos cake. Here, at least 5 thin layers are baked and spread with a chocolate and rum cream. The final layer is a layer of pure caramel, which becomes very firm. The result is an interplay between the creamy-soft cake and the crunchy caramel top. There are no limits to your creativity with this aluminum stencil. Thanks to the stencil, you can produce a wide variety of bases with great precision. Perfect, round crispy bases are created in no time at all. You can even go one step further and pour tempered chocolate coating into the stencil. This allows you to conjure up the perfect chocolate lid on a tartlet.
