Trempier fork spiral

Fine coatings and decorations can be easily made with the dipping fork. Dipping the truffles requires a little skill, but the beautiful results reward the effort.

Sprial Trempier Fork - Application

Fill your hollow balls with a filling of your choice and seal them with couverture. This must set before you can decorate the chocolates. Then you can remove them from the mold and place two chocolates at a time in the tempered couverture. This must not be too warm and the chocolates should not remain too long in the mass, otherwise they could melt. If this should happen, remove the melted coating and all the spilled filling generously without stirring.

The intact hollow spheres are now pressed down slightly with the dishing fork and then loaded onto the wire circle in a curved motion and lifted. Round pralines hold very well in the round dishing fork. However, if the hollow spheres are slightly larger, a spiral-shaped trembling fork is more suitable. The large hollow spheres can be easily loaded and thus do not fall back into the couverture after the beading. Now tap the edge of the container lightly with the tatting fork so that the excess couverture drips down.

Further decorations are made very simple. For example, roll the chocolates in chocolate sprinkles, colored sugar sprinkles or roasted ground hazelnuts. To achieve the typical hedgehog spikes, roll your truffles on a truffle grid using a second tamper fork with prongs. It is helpful here if the couverture is not too runny. With this fork you can save time without losing the beauty of your truffles. Create different decorations and surprise friends and family with delicious homemade chocolates.
