Wash out the mold with warm water, dry well and polish with a dry cloth. These steps are necessary so that the Christmas balls shine afterwards.
You can now draw small details in the polished chocolate mold. To do this, you can either use couverture that contrasts with the couverture with which you will then pour the Christmas balls, or you can paint fine details with cocoa butter color. Another option is to use a toothbrush to apply fine speckles of color to the mold before it is poured.
Once the desired decorations and ornaments are in place, pour tempered couverture into the chocolate mold. Pour out most of the chocolate again to obtain a thin layer of chocolate. Place the filled mold in the refrigerator. As it cools, the chocolate contracts and separates from the mold.
Now place the chocolate mold with the open side down on a cotton cloth and release the Christmas balls from the cavities.
Now glue each two hemispheres together with a fine layer of couverture on the edge to get whole Christmas balls.
Optionally, you can also fill the Christmas ball halves before gluing them together.
For that special touch, dust the finished Christmas bauble with gold dust.
