Thinly rolled out dough sheets for making lasagna sheets, ravioli and pasta of all kinds are produced in no time with a pasta machine, with the dough wheel you bring the individual pasta into shape. Whether funny jagged lasagna sheets, thin tagliolini or tortellini with fine serrated pattern her. The wheel is made of acetal resin, since this is optimally suitable for food, not only pasta dough but also shortcrust and Guetzliteig can be cut with it.

250 g white flour

250 g durum wheat semolina

20 g powder at will (tomato, spinach, wild garlic, beet or sepia ink)

5 eggs

Mix the dry ingredients together and form a hollow in the middle. Add the beaten eggs and knead everything into a dough. Finally, the dough should be nice and smooth and not stick to your hands. Add a little flour or water, depending on the consistency, until the dough is comfortable to work with. For a particularly nice dough, don't add salt and don't use eggs straight from the fridge.

Roll the dough out nice and thin with the help of a pasta machine. To do this, first fold the dough a few times and then roll it through the machine at an increasingly higher speed. If the thickness of the dough meets your requirements, you can place it on a lightly floured work surface. Pick up the dough cutter with the appropriate wheel. If you want to replace the resin attachment, turn the golden screw until the wheel comes out. Now loosen the attachment, insert another one and screw the wheel back in place.

Now you can use the wheel to cut your desired shape. If you use a rolling pin, for example, long ribbon pasta will be particularly uniform. For delicious ravioli, place a few dabs of filling in a row pattern on the dough, brush a little water or egg between them, and place a second dough on top. Press the dough down firmly between the dabs of filling so that the ravioli do not fall apart afterwards. Finally, cut the pasta evenly with the pasta dough wheel.

Homemade pasta requires a shorter cooking time, if they are quite fresh and rather thin, already two to four minutes are enough, dried they are ready after four to six minutes, the same applies to filled ravioli. Then serve them with a tasty sauce and some cheese.

You can also easily dry and store unfilled noodles. For example, cut long jagged ribbon noodles and hang them on a pasta stand. Tacapasta pasta rack can be adjusted individually, so the pasta can dry completely without touching.

The dough cutter is also perfect for cutting and decorating puff pastry, shortcrust pastry or cookie dough. For example, you can create pretty jagged shortcrust pastry bases for a tart, beautiful puff pastry pockets or great patterned Guetzli. For example, jagged labels made of cookie dough or fondant look especially cute, and you can use an embosser to give them a matching inscription.

For cleaning, you can briefly clean the wheel under running water, if it is somewhat stuck, it can also be unscrewed and cleaned individually.
