Proofing basket cover small

By using a proofing basket, the piece proofing of the bread becomes nice and even. With soft dough, for example sourdough, it can happen that it sticks in the proofing basket. The small proofing basket cover prevents this, and can also be used to protect the surface of firm doughs. The small proofing basket cover can be stretched over round proofing baskets with a diameter of up to 26 cm, over oval baskets of 25 cm x 16 cm or over oblong proofing baskets of about 32 cm x 13 cm. If you want to put it in the proofing basket as a protection, you have to choose a slightly smaller one, for the round proofing baskets it is enough for a diameter up to 20 cm.

Proofing basket cover - application

First, of course, you need to prepare your dough. Make your favorite bread dough with yeast or sourdough and let it rise according to the recipe. Once the leavening is ready, you can prepare the proofing basket.

For a soft dough, stretch the cover directly over the clean, still empty proofing basket and press it down slightly in the middle. Then sprinkle the basket generously with flour or baker's starch, with or without the cover, so that the dough does not stick together afterwards. Baker's starch also has the advantage that the bread shines beautifully if you coat it with a little water before baking.

Depending on the quantity portion your dough and then form individual dough pieces. Once you are satisfied with the consistency and shape, the bread is placed in the proofing basket. You can now cover a sourdough with a dough plastic or a second cover. Stretch a cover over the proofing basket so that no skin forms during the proofing process and the dough also remains soft and supple on the outside.

After the specified proofing time, the cover stretched over it is removed and the bread is turned out of the proofing basket. The dough can be placed either directly on a baking paper or, if available, on a previously heated bread baking stone or in an equally hot cast iron pot. Normally, the cover does not need to be washed after each use. However, if it is necessary, you can wash it by hand or in a washing machine at 40°C without detergent. Washing at too high temperatures will cause the rubber that allows the cover to be stretched to become brittle and wear out.
