Silicone mold Florentine Ø 6 cm, 8 pieces
Silicone molds are suitable for many different treats, because they can be easily baked and frozen, because they are soft and movable, the finished products can not simply stick in them. For example, you create delicious florentines, the core for a cream dessert or noble little decorative plates. The surface is still beautifully smooth after shaping and can thus be excellently coated with couverture or chocolate icing.
Silicone mold Florentine - Application
Find a recipe for delicious florentines and lay out the necessary ingredients and utensils. The silicone mold is suitable for all sorts of things, in addition to jelly and florentine mass, you can also shape pure caramel.
For florentines prepare the nuts. Especially convenient are sliced almonds, so the florentines will be nice and flat. Mix all the necessary ingredients and melt the sugar in a pan. This is then boiled with a little cream and honey, depending on the recipe, and poured over the flaked almonds. Then the mixture is mixed briskly and poured into the wells. To do this, the mixture is either spread in with a dough scraper or pressed in by hand. To prevent your fingers from sticking together, it helps to wet your hands completely and shape the dough in this way.
The florentines are then baked according to the recipe and must cool well before the next step. Loosen the individual thalers from the silicone mold and place them ready. Temper some couverture or melt a little cake icing. Now add a fine chocolate base to the florentines, you can use a brush or lightly dip the florentines. Either hold them with your fingers and dip them or place them on a tamper fork to do this.
Desserts with a core are particularly practical to coat. To do this, you also need a slightly larger silicone mold, such as a large hemisphere or flower mold. Add some cream to the edge and a small scoop of mousse or berries to the center. Then cook a slightly firmer caramel and pour it into the florentine mold. After cooling and a few minutes in the freezer, if necessary, the caramel will be firm. So you can take out the individual florentines and put them on the filling of the dessert. Then spread some cream over it again and place a thin sponge cake base on top. After freezing, the treat can be unmolded like this and enjoyed.
Silicone molds are easy to clean in the dishwasher, making baking, filling and unmolding even more fun.
