With this praline mass made from cashews you create delicious pralines as well as flavored fillings for your treats. This praline mass is composed of equal proportions of cashews and sugar. Praline masses are ideal bases for making delicate praline fillings. For this purpose, the mass can be mixed with couverture as desired and desired consistency. You can also use this praline mass to flavor a ganache. Since the cashew nut praline mass has an intense flavor of its own, you use it ideally as a flavor enhancer of chocolate ganache or cream fillings.

Cashews praline paste, 200 g

This cashew nuts praline mass is composed of 50% cashews and 50% sugar. After adding tempered couverture, you get a delicious cashew nut gianduja or also known in Germany as nougat. You can vary the addition of couverture as desired, depending on the desired consistency and the intended use. Larger or smaller addition of couverture will make your mass firmer or softer.

Application

For delicious and quickly made chocolates you need some hollow praline balls or shells, a piping bag and some couverture. Then put the prepared cashew nut filling into the piping bag and cut off the tip. This allows you to pipe the cream directly into the hollow balls or shells. You can also mix the praline mixture with a little chocolate ganache in advance, this will create a less intense, creamy cashew nut ganache. Finally, seal the pralines with some tempered couverture and decorate or coat with sprinkled decor, sprinkles or coconut flakes as desired.

The fine and intense cashew nut praline mass can be used immediately, or as a flavor enhancer of chocolate ganache and various cream fillings verwendent.
