You've wanted to make your own ice cream for a long time? Or how about marshmallows and fruit gums? To make these sweets, you need a stabilizer and binder. Gum arabic is a vegetable binder and also a stabilizer. It is extracted from the sap of acacia trees. Due to its tasteless and odorless nature, the additive can be perfectly used for sweets as well as for bread and pastries.

Application and properties

Add 10 g - 50 g of gum arabic powder to 100 ml of warm liquid or mass. The powder delays the crystallization of sugar in ice cream. In bread and pastries, the additive is used as a binder and emulsifier, so the finished dough products do not dry out immediately. The powder cannot be dissolved in alcohol. With the gum arabic powder you can make Bireweggli, yeast pastries, Biberli and also gingerbread shiny. In technical terminology, this is called "glazing" or gumming. To do this, take 100 ml of warm water and add about 30 g of the powder and coat your pastries. This gives them a nice shine and everyone wants to bite into them immediately. Gum arabic is also used as a glazing agent for dragée nuts. The nuts are coated with the gum arabic and get a beautiful shine.
