Sophisticated ice cream parcels

Summertime is ice cream time - without question! Everyone loves ice cream or sorbet because it comes in all kinds of flavours, there is something for everyone and there are actually endless combinations of flavours, fruits and spices. Ice cream also ensures that we get through these hot summer days in the best possible way and stay in a good mood. We have made a little video especially for you, with which you can spice up your ice cream to a special eye-catcher. Your guests in particular will be amazed! You can prepare the dessert very easily and all you need is the ice cream of your choice, melted couverture and an ice-cold marble plate. For extra decoration, we recommend a few fresh fruits and maybe a fruit jelly or two, but that's entirely up to you. Have fun making it yourself!

Ingredients:

400 g white couverture

400 g milk couverture

400 g dark couverture

Peppermint

Here's how:

  • The most important thing is that you use a marble plate and put it in the freezer for at least 3 hours before making the packets! If you don't have a marble plate at home, you can of course order one from us or use a cake plate. The only problem with the cake plate is that it doesn't retain the cold for nearly as long as the marble plate, so you have to put it back in the freezer after making 1-2 packets.

  • With the marble plate, on the other hand, you can make 6-8 packets at once, depending on the speed.

  • Once the 3 hours cooling time is reached, you can melt the couverture and as soon as it is liquid, take the plate out of the freezer.

  • Simply heat the couverture to 45 °Cwith a tempering device or over a water bath, in which case it does not need to be tempered.

    Of course, you don't need the entire amount of couverture, for one packet you only need about one soup ladle of couverture and after cutting the packets, one will have a weight of only about 20 g. However, you need to bear in mind that you will need a certain amount of couverture to be able to spread it well.

  • As soon as your couverture is liquid, you can now place the marble plate on your work surface, form your desired ice cream into balls and place them on a separate plate about 8 cm apart.   • Now take a ladleful of couverture, place it on your marble slab and smooth it out with a straight spatula.

  • As soon as you notice that the couverture is starting to set, you can start cutting it. It is best to cut it into a rectangle.

  • Simply remove the cut couverture from the plate and add it back to the rest of the couverture. You can see if the couverture has the right consistency for further processing. It should be neither too firm nor too soft.

  • Now detach your cut rectangle from the plate, place it around your ice cream ball and press the top end together with four fingers to form a packet.

  • Repeat this process as often as you like, or until the plate has to go back into the freezer.

  • If you want to use different couvertures, it's best to start with white, then milk and finally dark, then you don't have to clean the plate at all or only lightly.

  • The remaining couverture can be melted down again without any problems and used for other creations. If you leave the couverture to harden, you should temper it beforehand to avoid unsightly streaks or grey veils. You can find out how to do this HERE.

Decoration

When it comes to decorating, you have a completely free hand. After all, everyone has their own style and perhaps even their own personal motif. However, we'll show you a nice way to decorate the package.

All you need is a few fresh fruits - blueberries, strawberries, raspberries, currants, peaches, mangoes and physalis are the best. But of course you can use any fruit that suits your taste.

We also added some glitter spray to the packets and used fruit jelly to paint a beautiful pattern on the plate. To do this, simply fill the jelly into a small plastic bottle with a dosing function.

Now draw the desired pattern on the plate, place the packet next to the jelly and scatter some fresh fruit and peppermint leaves for colour. Finish with some glitter and et voilà: The perfect summer dessert!
