Tuna Tartare Recipe with Coral Hops

 

The somewhat different tuna tartare

A tartare for an appetiser is very popular. Often a tuna tartare is lightly marinated and then served on a bed of avocado. We have the avocado base, we have the light marinade as well, but what we have in addition is our special special sauce and our super beautiful and themed coral buns. The patties can be made in all shapes and colours and you can also add flavour to them with vegetable powders or spices. In our video, we show you how to make this delicious and, thanks to the sauce and the Hüppe, slightly more special tartare. Have fun making it and enjoy it

Tuna tartare

Ingredients:

180 g tuna

60 g mayonnaise

8 g soy sauce

50 g honey (liquid)

20 g mirin (rice wine)

16 g wasabi paste

20 g sesame oil

12 g suhshiingwer (very finely chopped)

1 pc avocado

a little lime juice

some black sesame seeds

This is how it works: The preparation

  • First chop the sushi ginger as small as possible.

  • Then mix the mayonnaise with the soy sauce, honey, mirin, wasabi paste, sesame oil and sushi ginger in a large bowl with a whisk.

  • Now cut the tuna into small cubes, put it in a bowl and marinate it with some sesame oil (about 1/2 teaspoon), lime juice and some black sesame seeds. Put the bowl in a cool place.
  • Now halve the avocado, remove the pit and cut it into small cubes. Season the avocado pieces with a little salt and pepper and mix with the juice of half a lime.
  • Now put 2 tablespoons of the avocado pieces into a dessert ring and press down lightly.
  • Then put 2 tablespoons of the tuna on top of the avocado layer and gently press this down too.
  • Put the layered tartare with the dessert ring in the fridge.

Coral flakes

Ingredients:

50 g egg white

25 g butter

45 g flour

Here's how:

  • Preheat the oven to 150 °C convection oven.

  • Beat the egg whites briefly and then stir in the butter. Then you can add the flour and stir it in briefly as well. This will make the mixture thick and spreadable.

  • Now carefully spread the mixture onto the coral silicone mould using a spatula and scrape off the excess mixture from the silicone mould. This is best done with an angled spatula.
  • Bake the flakes for 5-7 minutes.
  • If you want them to be a little more brown and rounded, you can carefully remove the Hüppenflocken from the silicone mould after baking, place them on a baguette tray and put them back in the oven for 1-2 minutes.
  • For more variation in the Hüppenflocken, you can also make them sweet or colour them with Progel. For a sweet variation, just add 25 g of sugar to the mixture. You can whisk this together with the egg white.
