The large dough scraper with thermometer is perfect for accurately tempering couverture as well as measuring creams and masses that are heated on the stove and need to be stirred. The thermometer can be easily inserted into the dough scraper to measure while you stir. Temperatures from -20 to +200 °C can be measured via the stainless steel needle, and the dough scraper made of supple silicone adapts nicely to the shape of the bowl or pan and can withstand temperatures of up to 220 °C. By stirring and scraping the bottom of the mass from the pan or container, the heat is distributed nice and evenly right during the measurement, so you get a very accurate result.

Dough scraper with thermometer - Application

Prepare all the ingredients for your creation. This can be, for example, an ice cream base, a vanilla cream or a sauce. If you want to melt or temper a chocolate-like mass, place it in the tempering device or over a water bath. Insert the thermometer into the dough scraper and use it to stir the mixture. If this is being heated on the stove or over a water bath, keep scraping the bottom as well as the edges so it doesn't burn and the heat is distributed nice and evenly. Make sure that the needle of the thermometer does not just barely touch the mass but is immersed one to two centimeters.

Depending on the mass and heat source, stir constantly or only sporadically. This way you can optimally observe the temperature change and remove your cream, chocolate or sauce from the stove at the right moment.

Finally, the thermometer can be removed from the dough scraper and briefly rinsed. Only the needle should be cleaned with water and detergent, the thermometer itself is splash-proof. You can simply put the dough scraper in the dishwasher.
