Ingredients Cookie dough

Butter | liquid35 g
Icing sugar 70 g
Vanilla seeds1 pinch
Whole egg25 g
Whole milk100 g
White flour90 g

Making the cookie dough

Melt the butter in a small pan. The butter does not need to be hot, just liquid. Then pour it into a bowl. Add the icing sugar and vanilla seeds and stir the mixture with a hand mixer.

In a separate bowl, mix the whole egg with the milk and add the mixture to the icing sugar mix a little at a time. Finally, sift in the flour and mix well again until you get a smooth dough. At this point, you can also mix in flavours, gel colours or ingredients such as cocoa nibs or freeze-dried fruit. This allows you to flavour the waffles individually and adjust them to your personal taste.

Preheat your waffle iron to 180 °C. Once the temperature is reached, place a tablespoon of the waffle mixture in the centre of the iron and close it. Let the waffle bake for 1 1/2 to 2 minutes. Then remove the baked batter from the hot iron with a spatula and turn it into a nice waffle cone using a cornet turner. Make sure your base is nice and straight and that you work really quickly when rolling up. You must not let the dough cool down at all, otherwise it will become brittle.

Storage & Shelf Life

The finished ice cream wafers can be stored in a dry place for up to one month in an airtight container. So you can also make them in advance.
