Preparation of the gnocchi

For gnocchi, you need potatoes that are firm to boil. These are mashed after cooking and while still hot (peeled and then mashed) and kneaded with the remaining ingredients such as flour, cornstarch, egg and salt. After the mixture has been kneaded well, make rolls with a diameter of 15 to 20 mm from the dough. Cut these into even pieces (approx. 1-2 cm long). Now take the Nordic gnocchi wooden board, place it at a slight angle on the work surface and sprinkle with a little flour or durum wheat semolina. In Sardinia (Italy), a form of gnocchi has developed that is not made from potatoes like the well-known potato gnocchi, but from durum wheat dough. As they are slightly smaller than the gnocchi di patate, they are known as gnocchetti. Because of their origin in Sardinia, they are known as gnocchetti sardi. Their similarity to potato gnocchi lies in the ridges on the curved surface. For this pasta, you make a durum wheat dough, which is then formed into a 1 cm thick roll and cut into small pieces using a metal horn. As durum wheat dough is firmer than potato gnocchi dough, it is rolled over the board using a metal horn rather than by hand. As a result, this type of pasta looks exactly the same as potato gnocchi, but has a little more bite after cooking than the originals. Both varieties taste good anyway. 

Preparation of homemade pasta: Garganelli

What are garganelli? Garganelli look like penne, but have horizontal stripes instead of vertical stripes. Garganelli are made from a normal egg pasta dough. To make this delicious pasta, you first need a classic egg pasta dough. Once you have made the dough, you need to cut small squares from the pasta sheets. These should measure 5 cm x 5 cm. Then take the Nordic pasta board and place it in front of you so that the patterns are perpendicular to you. Next, sprinkle some durum wheat semolina on top and place a square of dough on the board so that the corners of the square are facing up and down. Using a wooden stick, start rolling up the dough with a little pressure at the bottom corner. As a final step, you can now push the rolled up pasta off the wooden stick and you have homemade garganelli with a beautiful Nordic pattern.
