Madagascar vanilla powder
has the same benefits as a pod, but is even more practical!
Easy to use, soft and warm vanilla powder is a culinary gem. A few grams are enough to flavor desserts, butter semolina and sauces for fish and seafood.
Cultivation of vanilla is reserved for patient and passionate souls
A precious orchid in the middle of the tropical forest. Vanilla is an orchid, Vanillia planifolia, whose cultivation requires constant attention and care. It is a liana borne by a tree, usually a mango or avocado tree. It does not flower until three years after planting and it takes another eight months for the pods to ripen and be harvested.
How is Madagascar vanilla produced?
The preparation of vanilla is very laborious, as it is completely manual. The flowers are pollinated by hand. This requires a lot of patience and love. After harvesting, the pods are first scalded and steamed. Then they are dried in the sun for fourteen days and smoothed by hand. A second long drying period of eight months in logs preserves their strong flavors.
All the flavors of bourbon vanilla in a delicate powder. The vanilla powder is made from ground vanilla planifolia pods. This vanilla from Madagascar has a delicate milk chocolate aroma. With its endless sweetness, Bourbon vanilla seduces with its floral notes of roasted and camphor plant essences. Please note: Vanilla powder is made from dried and ground inferior pods. Its flavor is less strong than that of vanilla beans, but its convenient format allows for longer use.

The history of vanilla is closely linked to the history of societies
Vanilla originated in Mexico, where the Aztecs used it to soften the bitterness of chocolate. This "black flower" was introduced by Cortes in 1521. Later, Louis XIV fell in love with the plant and wanted to grow it on the island of Bourbon, also known as Reunion Island. An artisan skill that is still appreciated today The vine flowered but did not bear fruit because it had to be fertilized by a wasp that only existed in Mexico. No one knew how to fertilize it when Edmond, a young slave from Bourbon Island, understood the procedure in 1850 by pricking and shaking the flower. In gratitude, he was set free, and the young man took the name Freedom Albius, in reference to the white color of the orchid.
Even today, pollination is done by hand by women, the "marieuses". During the flowering period, which lasts only a few days, they can pollinate up to a thousand flowers a day. This completely manual process explains the preciousness of Madagascar vanilla and allows us to better enjoy it in our recipes!
