The CMC powder must not be missing in a cake studio. The powder is a thickener, which is very popular to make fondant suitable for modeling. The CMC makes the fondant harder and dries faster. Diluted with a little water, you can even make an edible glue out of it. So you can make even more cake decorations.
Application and properties
The powder is odorless and tasteless. If you add a little CMC to the fondant, the flexibility of the sugar paste is increased. It also has the effect that the modeling mass is strengthened and releases moisture faster. Thus, making sugar flowers from fondant will be faster and easier for you. The powder allows you to make filigree flowers, vines and ornaments from rolled fondant. For 250 g of rolled fondant you need 1 teaspoon of powder. Knead the powder well into the fondant and pack it airtight in a plastic bag. It is best to leave the modeling fondant with the powder overnight. If it has to go a little faster, 2-3 hours are also sufficient.
With CMC and water you can also make your own edible glue. Take 30 g of boiled water and 1 g of CMC powder, mix it in a jar with a screw cap and close it. Shake the jar again and let it rest for at least 24 hours. Then you can use your edible glue.
