Step by step
If you're in a hurry: the compact recipe card further down sums it all up.
1
Heat the milk and mix the powder
Put 250 g of milk with the sugar and the vanilla seeds in a pan and heat everything over medium heat. Meanwhile, stir the vanilla cream powder in a separate bowl with the cold 50 g of milk – keep stirring until no lumps remain.

This is what you need for it
2
Thicken the cream
As soon as the milk is hot, pour a ladleful of it into the mixed powder mixture and stir quickly. Return everything to the pan and keep stirring without pause until the cream thickens noticeably. Then take it straight off the heat – that way nothing burns.

3
Let it cool completely
Fill the cream into a shallow bowl and lay the cling film directly onto the surface, not just over the rim. Let it cool completely. This step is the reason no skin forms later.

4
Fold in the cream
Whip the 160 g of cream until stiff and keep it cold. Briefly beat the cooled cream smooth with the mixer so it becomes supple. Then carefully fold in the whipped cream from bottom to top – work slowly so the mixture stays airy.

5
Fill the vanilla cream tartelettes
Fill the cream into a piping bag with a round piping nozzle (10 mm). For the large tartelettes (7 cm) reckon on around 30 g of cream, for the small ones (5.3 cm) about 20 g.

6
Decorate with berries
Next, garnish each tartelette with berries of your choice – combine freely whatever you like best. Dust the tartelettes with a little icing sugar and place a fresh mint leaf on top of each. Serve them as soon as possible – that keeps the shells crisp.

Storage & shelf life
The tartelettes taste best freshly plated. In the fridge, well covered, they keep for 1 to 2 days, although the shells become softer.

So they're guaranteed to succeed
Make vanilla cream without lumps
Always dissolve the powder in cold milk before the hot milk is added. If you stir it straight into the warm liquid, it clumps immediately.
Keep no-bake tartelettes crisp
Since you're making no-bake tartelettes here, the shell is ready from the start – and therefore sensitive to moisture. So fill the tartelettes only shortly before serving.
Fill tartelettes like in a patisserie
When filling tartelettes, a round piping nozzle of 10 mm and a weight as a guide help: 30 g for the large shells, 20 g for the small ones. That way every dessert with fresh berries turns out evenly beautiful.
Frequently asked questions
Yes, you can easily prepare the cooked cream a day ahead and keep it covered in the fridge. Fold in the cream only just before plating, otherwise the mixture loses its airiness.
All red berries work wonderfully. It's best to combine two to three varieties – that brings colour and a fine acidity that balances the sweet cream.
Otherwise a firm skin forms on the surface as it cools, which later leaves small lumps in the cream. If the film lies directly on top, the cream stays consistently smooth.
