The silicone mat is ideal for a wide variety of applications. You can make decorations from tempered chocolate coating, bake Japonaiszüngli or conjure up pretty Hüppen. With this silicone mat you can fill 18 round and 21 oval cavities at the same time. The silicone mold can easily be put in the dishwasher and thus be reused. The round cups have a diameter of 3.3 cm. The ovals are 4 cm long and 2.3 cm wide.

Silicone mat round and oval

This silicone mat is primarily used for japonais pastries. But what actually is Japonais? Japonais is a whipped egg white mixture, be it with hazelnut, almond or even pistachio flour. Japonais is often used as a base for cakes, as in the Zuger Kirschtorte. However, this japonais mixture is also popular as a pastry. The most famous variety is the Japonais-Züngli. The silicone mold has an overall size of 34 x 28 x 0.2 cm and is both cold-resistant and heat-resistant from - 40 °C to + 250 °C. The silicone mold is dishwasher safe, and silicone is very flexible and does not deform during the dishwashing cycle. The round troughs have a diameter of 3.3 cm. The ovals are 4 cm long and 2.3 cm wide. 

Delicious crunchy tongues with nut filling

It is best to use dough for these silicone mats, which can be easily spread. These crispy tongues are perfect for these sweet little molds in the silicone mat.

Ingredients:

60 g fresh egg white (10 g Protein powder, 50 g water) 

25 g sugar

60 g Almond flour

75 g sugar

For the filling:

50 g Hazelnut- or Almond filling

30 g soft butter

Place the silicone mat on a baking tray lined with baking paper. Beat the egg whites until stiff. Now add 25 g sugar. Mix 75 g sugar with the almond flour and gently fold the dry mixture into the egg whites. Do not use the mixer for this. We want the mousse to remain airy. Therefore use only a Rubber scraper or something similar. To ensure that the beaten egg whites remain fluffy, you can also fold in the flour mixture in two parts. Note that you mix the masses only as long as necessary. Now you can use the rubber scraper to put 1-2 blobs of the mixture on the silicone mold. With a Angle spatula you can spread the mass well and pull off the excess mass only slightly, so that the cookies are not too thin. If you have made more mass, you can simply put the silicone mold on the next tray and repeat the process. Bake the Japonaise cookies at 170 degrees top/bottom heat for about 10 minutes. Let the cookies cool well before you fill the halves. 

Now take the soft butter and the nut filling to hand. Beat the butter until fluffy and add the nut mixture. So that you can put the filling neatly on the cookies, you should fill the filling in a piping bag. With the help of a Piping bag holder you will certainly succeed. Place a piping bag over the holder. Now put as much filling into the piping bag until a maximum of 2/3 of the piping bag is filled. Close the bag at the top. Now cut off a little of the piping bag and pipe small dots onto the Japonais cookies. Remember to only put a dab on one of the two halves. You can simply place the lid on the cookie and press it down lightly. If you like, you can add a little Powder snow trickle over the crispy tongues and give the pastry the final touch. 

One silicone mat for different applications

The silicone mat is ideal for various applications. So you can make decorations from tempered chocolate coating. If you want to use the silicone mold with chocolate, you should work with the PVC foil instead of baking paper. Place the silicone mat on the PVC foil and fill the cavities with tempered chocolate coating and pull off the excess chocolate with an angled spatula. You can also do this process directly with chocolate tattoo foils instead of PVC foils. This will give the chocolate decorations a pretty pattern. If you want to have especially unique chocolate pieces, you can also bring your own patterns on the PVC foil with some cocoa butter and a brush or spray the PVC foil with the airbrush gun beforehand. 

What do I need to consider when cleaning and caring for silicone molds

Before use, you should place your silicone mold in a warm water bath with some dishwashing liquid. This is not necessary, but it contributes to the longevity of your silicone mold. The warm water with detergent closes the pores of the silicone surface better. Thus, the material remains flexible for a long time and you can enjoy the silicone molds longer. After the silicone mold has been in the water bath for 5-10 minutes, you can now place the mold on a kitchen towel to drain. Do not try to rub the mold dry with the towel. Silicone is an excellent lint catcher. So your silicone mold may become covered with lint when you dry the baking pan with the kitchen towel. Once the mold is dry, you can use it right away. Additional greasing is not necessary. 

After use, you can simply put the silicone mold in the dishwasher. Depending on how often you use the silicone mold, we recommend that you outgas your silicone mold 1-2 times a year. To do this, place the silicone mold in the middle of your oven at 200 degrees top/bottom heat for 4 hours. The heat causes certain substances in the silicone baking mold to volatilize. Occasionally, a white layer or white dots may form on the silicone mold. This is especially common if you have not used the silicone mold for a long time. To do this, simply place the mold in the water bath with dishwashing detergent. Then the grease film will dissolve from the silicone mold. Due to the flexibility of the material, you can fold silicone molds and store them in a space-saving way. Don't worry. The silicone mold will always find its way back to its original shape, even after folding or bending. Say goodbye to bulky metal baking molds!
