The high-quality silicone mold makes it easy for you to make 4 delicious popsicles, but can also be used for baking in the oven or microwave. The ready-baked or frozen treats taste best when the delicacies are coated with a thin layer of couverture, with the practical handle they can also be enjoyed easily without getting dirty hands.


Silicone mold for ice cream, sorbet and popsicles

At the beginning, of course, a suitable ice cream mass must be prepared. In this form, all kinds of ice creams and sorbets can be frozen, you can learn various recipes in our ice cream and sorbet course. If you want it to be a little easier, you can, for example, mix some natural yogurt with Monin syrup Mix with the syrup of your choice. Try again and again in between to see if it already tastes good or if a little more syrup is needed. For a sorbet is suitable in addition to the syrup also Fruit puree. You can also boil 120 g milk with 20 g acacia honey and pour the mixture over 40 g couverturedrops. The mixture is then briefly cooled and mixed with 40 g of whipped whole cream. No matter which recipe you use, be sure to use our most important ingredient: Bourbon vanilla Madagascar. Vanilla gives the mass a special touch. 

The ice cream mixture is now filled into the prepared mold, if necessary you can also add a filling of jelly or chocolate in the center. Then the mold is filled up ready and the wooden sticks are pushed in. So the whole thing is put in the freezer for at least four hours.

Now you can open the silicone mold and easily shape your popsicles and enjoy or refine them right away. Especially delicious is especially a thin layer of couverture. The completely frozen ice cream is held on the stick and dipped in couverture. If you want to cover the chocolate layer with brittle, the couverture does not have to be tempered. If you want a shiny, crisp chocolate coating, you should temper the drops. It is not enough to simply melt the drops. The chocolate coating must be tempered before use. Use only high quality Couverture and not the chocolate from the supermarket. During tempering, each couverture goes through three stages. Melting, cooling and heating again. After the last stage, the couverture is at the optimum processing temperature. Depending on the couverture, the temperatures vary. If you are looking for the Table in our blog post, then nothing can really go wrong. To make sure that your couverture really has the right temperature, you can additionally use a Chocolate thermometer to the help. 

Now dip your well-frozen popsicle into the chocolate coating. The ice cream is taken out again immediately, so that it does not melt. The surface of the chocolate is still liquid, so you can dip it with Almond or hazelnut brittleCocoa nibssprinkle with almond slivers or crunchy pearls. Thus, the glaces are placed on a baking paper and put again in the freezer before enjoying.


What do I need to consider when cleaning and caring for silicone molds

Before use, you should place your silicone mold in a warm water bath with some dishwashing liquid. This is not necessary, but it contributes to the longevity of your silicone mold. The warm water with detergent closes the pores of the silicone surface better. Thus, the material remains flexible for a long time and you can enjoy the silicone molds longer. Especially if you also want to bake with this ice cream mold. After the silicone mold has been in the water bath for 5-10 minutes, you can now place the mold on a kitchen towel to drain. Do not try to rub the mold dry with the towel. Silicone is an excellent lint catcher. So, your silicone mold may become covered with lint when you dry the baking pan with the kitchen towel. Once the mold is dry, you can use it right away. Additional greasing is not necessary.
After you have baked delicious cakes or frozen popsicles, you can simply put the silicone mold in the dishwasher. Many baking molds are usually not allowed to be put in the dishwasher, because the anti-adhesive coating could be washed off by the suds. This is not the case with silicone. Depending on how often you use the silicone mold, we recommend that you outgas your silicone mold 1-2 times a year. To do this, place the silicone mold in the middle of your oven at 200 degrees top/bottom heat for 4 hours. The heat causes certain substances in the silicone baking mold to volatilize. Occasionally, a white layer or white dots may form on the silicone mold. This is especially common if you have not used the silicone mold for a long time. To do this, simply place the mold in the water bath with dishwashing detergent. Then the grease film will dissolve from the silicone mold. Due to the flexibility of the material, you can fold silicone molds and store them in a space-saving way. Don't worry. The silicone mold always returns to its original shape, even after folding or bending.
