Blueberry parfait
1
Whip the egg white and cream separately
Put the egg white together with a pinch of salt into a clean, grease-free Bowl and whip it with the Hand mixer. As soon as it starts to foam, sprinkle in the sugar slowly and gradually – this makes the egg white nice and stable and glossy. Once it forms stiff peaks, set it aside.
Whip the full cream in a separate Bowl until creamy – it should be nice and airy and firm, but not yet too stiff.

2
Combine egg yolk and cream, fold in the egg white
Fold the egg yolk into the cream and gently stir everything from bottom to top with a Dough scraper until you get a homogeneous mixture.
Add the whipped egg white in several portions and likewise carefully fold it in from bottom to top. Don't stir too much – the air in the egg white makes the parfait wonderfully creamy!

3
Fill in the light layer and mix the blueberry mass
Pour about a third of the light mixture into the mold and smooth it out – this will be the light layer of the marble effect.
To the remaining mixture, add the Blueberry puree, the lemon juice and the vanilla seeds. Mix everything well until the mass is nice and homogeneous and evenly purple-pink.

4
Create the marble effect and freeze
Pour the blueberry mass over the light layer in the mold. Take a fork or a spoon and run it through the two masses with small, precise movements – don't stir too much! The goal is beautiful, clearly visible swirls in both colours.
Tap the mold once more onto the work surface to remove the last air bubbles, and place it in the freezer for at least 24 hours.

5
Turn out and decorate
Once the parfait is perfectly frozen through, turn it out onto a nice plate or a wooden board. Drizzle fine stripes of melted Dark chocolate over it and decorate with meringues, fresh blueberries and mint leaves.

So your parfait turns out perfectly
Always use blueberry puree
For this recipe, be sure to use blueberry puree or frozen blueberries, never fresh ones. Fresh store-bought blueberries are cultivated berries with pale flesh – their pigment is far too weak and turns the mass an unappealing greyish instead of the typical bright purple-pink.
Less is more when marbling
When creating the marble effect, run through the two masses only with small, precise movements. Stirring too much mixes the colours completely – and the beautiful swirl effect is lost.
Perfect for preparing ahead
The parfait is superb to prepare the day before and waits patiently in the freezer. That way you have no stress on the actual day and can focus entirely on your guests.
Frequently asked questions
Yes, that's one of the great advantages of this dessert! You can easily prepare it several days in advance and store it in the freezer – well wrapped, it even keeps for up to 3 weeks.
We advise against it. Fresh store-bought blueberries have pale flesh with too weak a pigment – the mass turns greyish instead of purple-pink, and the flavour also stays bland. Use blueberry puree or frozen berries.
The egg white and egg yolk are not heated – so be sure to use very fresh eggs and keep the cold chain intact. For pregnant women, small children and immunocompromised people, a dessert with raw egg is generally not suitable. Freezing does not replace heating.
