Carma Lesuk temperature control
To temper, melt two thirds of the desired couverture at around 45 degrees. Then leave the mixture to cool and add the remaining third. Stir the mixture until it reaches a temperature of 28 to 29 degrees. Then heat it up again to 32 to 33 degrees. As soon as the couverture has completely melted, you can test it. If it sets nicely and has an even gloss, it is correctly tempered and ready for further processing. A tempering device can help you with this, but is not absolutely necessary.
Use and storage
You can use the tempered couverture to mold chocolates, make chocolate bars or create decorative elements for desserts. For example, you can make intricate shapes or create a decorative edge for your cake. Couverture is also very suitable for fillings. In combination with a ganache and fruity components, you can create fine praline creations. Nut fillings or fruity flavors can also be harmoniously integrated.
