Tips from our kitchen

• Patterned tails: press the pattern into fondant with the mermaid tail silicone embosser and place it on the cake or cupcakes.
• Sea colours: turquoise, lilac and mother-of-pearl shades suit the theme. Scatter the sprinkles onto icing that is still wet so they stick.
• Chocolate starfish: pour small starfish from couverture chocolate in the mould to decorate the cake and cupcakes.

A reliable dough for mermaid and dolphin biscuits is our Mailänderli recipe.
