Country Bread with Wheat Ear Pattern

Ruchmehl, milk and a wheat ear made of flour

Ruchmehl is the flour that gives Swiss bread its robust, slightly nutty flavour. Together with some White flour and whole milk instead of water, it becomes a country bread with a dark, crisp crust and a soft, moist crumb.
The pattern on top is simpler than it looks: the loaf is lightly moistened, a stencil is placed on it and flour is sieved over it. A side cut gives the loaf room to rise in the oven so the ear does not tear.
In the steps we explain what matters when kneading, shaping and baking, and how to create the steam a good loaf needs in a home oven using an empty baking tray.

Ingredients
Quantity:
Dough
540 gRuchmehl
135 gHalbweissmehl
450 gWhole milk
17 gFresh baker's yeast
10 gBaking malt
20 gSalt

Kneading the dough
1
Weigh out the flour and baking malt
Weigh 540 g Ruchmehl and 135 g Halbweissmehl directly into the bowl of the stand mixer and add 10 g Baking malt. The malt feeds the yeast and gives a strong, glossy crust colour and a fine, malty aroma. Set the salt aside for now.

2
Knead the dough
Add 450 g whole milk and 17 g fresh yeast and knead everything for 10 minutes on the slow setting. During this time the gluten network forms, which later holds the fermentation gases.
Only now add the salt and knead the dough for another 3 to 4 minutes on the faster setting, until it is smooth and elastic and pulls away from the side of the bowl.

3
Shape into a round
Place the dough on the work surface, fold the edges all round towards the middle and press them down lightly. Turn it over and drag it with both hands into a smooth, taut ball. The tensioned surface keeps the dough in shape during the proof.

Proof and shape
1
Bulk fermentation
Spray a bowl with a little water so the dough doesn't stick. Put the ball in, cover the bowl and let the dough rise for 30 minutes.

2
Divide and pre-shape
Halve the dough and weigh the pieces, each should weigh about 600 g. Flatten each piece, fold the top third towards the middle and the bottom third over it. This gives the dough tension again.

3
Shape into a batard
Roll each piece of dough into an elongated loaf with both hands and press the seam firmly closed so it doesn't open in the oven. Roll the ends slightly thinner: this gives the country bread its typical shape.

4
Final proof
Place both loaves seam side down and spaced apart on a baking sheet lined with baking paper, then let them rise for 40 minutes. During this time, preheat the oven to 230 °C top and bottom heat and place an empty baking sheet on the oven floor.
Decorate and bake
1
Stencil and cut
Brush the loaves with very little water so the flour sticks. Place the stencil on top and sieve the flour evenly over it. Lift the stencil straight up without dragging it across the dough, so the pattern stays sharp.
Finally, score the bread lengthwise on the side with the Baker's knife. The cut gives the bread room to expand in the oven, so it doesn't tear open somewhere through the pattern.

2
Baking with steam
Slide the tray into the lower half of the oven, immediately pour a cup of water onto the hot oven floor and close the door. Bake the loaves for 10 minutes at 230 °C, then reduce to 190 °C and bake for a further 5 minutes with steam.
Open the door briefly, remove the water tray and finish baking the loaves for 30 to 40 minutes without steam. If the base sounds hollow when tapped, they are done. Let them cool on a cake rack so the crust stays crisp.

Storage & shelf life
Wrapped in a cotton cloth or kept in a bread bin, the country bread stays fresh at room temperature for two to three days. Please do not refrigerate it: bread goes stale faster there. Sliced, it freezes well and can be thawed in portions.

Not necessary for the recipe, but it goes well.

Salt only after 10 minutes
Salt tightens the gluten and slows the yeast. If it is added only after slow kneading, the gluten network can develop undisturbed first, and the bread becomes lighter and airier.
Little water, fine sieve
For a crisp pattern, apply only a very small amount of water, otherwise the flour turns to paste. Dust the flour through a Sieve and lift the Stencil straight up.
The tap test
Tap the underside of the loaf: if it sounds hollow, it is baked through. If it sounds dull, give it another five minutes.
Frequently asked questions
A dark Swiss wheat flour with a higher bran content. It gives country bread its robust, slightly nutty flavour and darker crumb.
Milk fat and milk sugar make the crumb softer and finer-pored and help the crust brown more attractively. The bread also stays fresh a little longer.
Yes, it just takes a little more time and effort: knead it vigorously for about 15 minutes, then add the salt and keep kneading until the dough is smooth and elastic.
