miniSchoggi dough horn, 12 cm

The bread dough has risen wonderfully, the work surface is well dusted with flour and the baking tray is ready next to it. Now all you have to do is transfer the airy dough from the bowl to the work surface and from there to the baking tray. No problem with a suitable dough horn. The dough scraper is sturdy enough to cut off pieces of dough, but still flexible so that it adapts well to the curve of the bowl. Soft fillings such as cake fillings, buttercream or praline fillings can also be easily removed from the bowl with the small scraper and placed in a piping bag or on the cake.

Dough scraper - Use

If you have a bowl of cake batter or another mixture such as buttercream or a praline filling, the small dough scraper will come in handy. The cake batter can be easily scraped out just like bread dough, and the sturdy dough scraper can also be used for portioning by tapping off a portion of the mixture and loading it onto the dough scraper. This also allows you to easily fill piping bags with different batters.

While you hold a piping bag folded over at the top with your weaker hand, use the dough scraper in your stronger hand to scrape off some of the mixture and place it in the piping bag. The piping bag can be closed at the top of the mixture and fitted with a nozzle at the front or simply cut open to help you fill and portion. If there is only a little mixture left in the piping bag at the end, you can place it on a smooth surface and use the back of the pastry scraper to push the mixture down.

For bread or cake dough, the bowl is held at a slight angle so that the dough can be easily scraped out with the dough scraper. For bread, the dough is formed on a floured work surface and then placed on a baking tray or in a proofing basket. The flattened edge can also be used to scrape out small pieces of dough. For cake fillings, you can scrape some of the cream onto the cake base with a pastry scraper and spread evenly.

Once your bread or cake is in the oven, all the buttercream has been piped and the filling has been filled, the large dough scraper can simply be put in the dishwasher. It is heat-resistant up to around 100°C and can therefore also be used for hot batters.

A dough scraper helps in various areas of your kitchen and makes it easier to scrape a wide variety of batters out of the bowl. This makes baking bread, making cakes and filling piping bags much easier!
