The Carac tartlet usually has a diameter of 5 - 7 cm. The sugar or shortcrust pastry is blind-baked with blind-baking balls and filled. The filling consists of full cream, butter and high-quality Swiss couverture. The tartelette is filled almost to the top with the ganache and left to stand briefly to allow the ganache to set. The green surface with a dark center is characteristic of this Swiss classic. This is created using colored melting fondant, which is applied with a piping bag. The center is covered with dark chocolate coating. Nowadays, the colors and decorative elements vary. For example, pretty flowers can be cut out of fondant or marzipan. Why should you use a perforated cake ring?
The perforated tart ring primarily ensures an evenly crispy pastry. You have probably often noticed that your tart is dark at the bottom and very light at the edges.
