Chocolate molds and how to use them
For all molds used for casting chocolate shapes, preparation is extremely important. Rinse the mold with lukewarm water and a gentle dish soap. This must contain neither Lye nor rinse aid, as these would damage the molds. Then rinse off all residues with lukewarm water and dry the mold very thoroughly. Polish the mold with non-fibrous cotton wool or a very fine tissue. From this point on, you should avoid touching the mold directly, otherwise fingerprints will be visible on the chocolate later. Hold the mold at the edge where no chocolate will be poured. Make sure your mold has reached room temperature, as a mold that is too hot or too cold can interrupt the tempering process. Next, use an Airbrush gun to spray the chocolate Hemisphere mold with a Cocoa butter color of your choice. Then prepare your Stamp by pressing the plastic handle into the square recess of the Stamp, which fits perfectly and ensures maximum stability. Now warm the Stamp with a heat gun and press it carefully into the cavity of the mold. This process gives you the beautiful pattern that will then adorn your Praline. You can then fill the Hemisphere mold with tempered couverture, and tap it several times with a Chocolate hammer or the back of a Spatula to release all air bubbles. Now turn the mold upside down and pour the chocolate back into your tempering device. Here too, don't forget to tap, as we ultimately want a nice, thin Praline shell. Once the chocolate has completely drained out, run the Spatula along the bottom of the mold once to remove the excess couverture. Finally, clean it once more with a metal horn and then place the mold in the fridge for approx. 5 minutes. After that, you can fill your Pralines with a filling of your choice and complete your masterpiece.
Airbrush gun for chocolate and cocoa butter – use and properties
The Airbrush gun simply needs to be connected to a compressor and you can start doing various Airbrush work with the Airbrush gun. Make sure that the maximum working pressure is not exceeded. Without a compressor, this Airbrush gun does not work. You can connect the Airbrush gun to an existing compressor or get our matching Airbrush compressor for chocolate. After connecting the Airbrush gun to a compressor, you can fill the color cup with liquid cocoa butter and close it properly. The airflow starts by pressing the trigger lever. The spray pattern depends on the distance between the spray nozzle and the work surface.
To achieve particularly even results, slow movements with a small amount of color and fast movements with a large amount of color are recommended. If you want to spray finer lines, remove the needle cover and bring the gun close to the work surface.
Since the Airbrush gun set has three differently sized color containers, you can work with maximum flexibility. To use the Airbrush gun, simply fill the color container and pull the lever back slightly. You can set the desired color flow rate with the adjustment screw at the end of the handle. In addition, you can regulate the color flow via an adjustment screw directly on the color cup.
Please note that our Airbrush gun is only suitable for Cocoa butter colors or liquid Airbrush color / water-soluble color for spraying Fondant or marzipan. The Airbrush gun is made of stainless steel and can therefore be used without any issues in the food sector.
When finishing your Airbrush work, make sure that the air supply is turned off and the pressure is released. Then empty the color container and clean all parts thoroughly to avoid residue build-up. Cleaning is also made easier because the gun can be completely disassembled into individual parts. Fill the color container with water or solvent, then cover the needle holder with your finger and operate the trigger lever to start the airflow. This causes the air to flow into the nozzle and removes any color remaining in the Airbrush. Remove your finger from the needle holder and empty the entire gun. You can repeat this process several times until your gun is completely free of impurities.
