The travel cake is suitable for picnics, train, boat or car trips, weekend trips or just for in between. This baking pan should not be missing in your kitchen! The Travel Cake is characterized by its centered filling. After baking, the cake is filled with ganache, jam or fruit jelly and finally decorated as you like. 


How to make the delicious Travel Cake

The Travel Cake consists of a baking pan and a long cylinder. This combination allows to bake a perfect cake with a continuous hole. This open center is later filled with the ganache, jam or jelly. 

Before you can start baking, you should fill the baking pan with the Baking Release Spray spray. This spray will prevent the cake from sticking to the mold and will help it release from the mold. Remember to spray the cylinder as well. It is important that you really grease the tube only at the end and in the mold, because if you put the tube back into the mold already greased, then you strip off some of the grease again when you put it in and it can happen that your cake then sticks to the tube. Both the mold and the cylinder can still be sprinkled with additional flour. Place the cylinder in the center of the baking pan by pushing the cylinder through the opening provided.

YOU need 

35 g Almond flour

60 g finely ground pistachios

145 g granulated sugar

60 g White flour

120 g Protein

70 g liquid butter

50 g Pistachio filling

100 g Chocolate drops

 

Heat your oven to 160 °Cconvection oven or 175 °Ctop/bottom heat. In a bowl, mix the almond flour, pistachios, sugar and white flour. In a second bowl, mix the egg whites with the melted butter and the pistachio filling. If you use the egg white powder, make sure that you mix it with the water long enough. Depending on the quantity, this can take several minutes to hours. Now add all the dry, mixed ingredients to the liquid mixture and mix everything together well. Now you should get a viscous mass. Crush the drops if the chocolate chips are too big for you and fold them into the mixture. To mix you can use the Hand mixer or the NOVA dough machine use the dough hook attachment. Now fill the dough into the baking pan. Now bake the cake for 30 minutes and then again for 15 minutes without the lid. After baking, the cake needs 5-10 minutes to cool briefly. This ensures that the upper part of the cake also becomes nice and flat. After cooling, you can gently turn the cylinder and pull it out of the baking pan. Your cake must now cool completely so that you can fill the cake better. 

Now you should also turn the cake out of the cake pan and fill it with a filling of your choice. Place the cooled cake vertically on a baking paper. A suitable filling is, for example, a ganache, a jam or a fruit jelly. You can use a piping bag to fill the cavity. We decide on a raspberry jam. Take a Piping bag and a Piping bag holder to help. Put the piping bag over the holder and fill it with the raspberry jam. Now cut a hole in the piping bag and fill your cake with the delicious jam. When the filling comes out at the top, turn the cake once by 180 °C and fill the cake from the other side until the jam comes out there as well. Smooth both ends. For the decoration, the possibilities are incredibly wide. You can decorate the cake with Cake icing coat or just leave it as it is. You can also use buttercream to pipe pretty flowers or patterns. So you can wrap the cake in foil right now and prepare it for the trip. 


Cleaning the baking pan

We recommend that you wash the cake pan by hand with warm water and a little soap. Soak stubborn food residues in hot water and then rub them off with a conventional soft sponge. Avoid using aggressive cleaners and sharp objects, as they can affect the performance of the cake pan.
