Cake ring perforated Ø 8 cm x 2 cm
For wonderfully crispy Carac bases or tarts with a perfect shortcrust pastry, this perforated cake ring is the perfect kitchen aid. Due to the even heat distribution and the air contact, the bottom of your Carac becomes wonderfully crumbly and harmonizes so great with the freshness of the filling.
A patisserie classic from Switzerland - Carac
Carac tartlet usually has a diameter of 5 - 7 cm. The sugar or shortcrust pastry is thereby filled with Blind baking balls blind baked and filled. The filling consists of whole cream, butter and high-quality Swiss couverture. The tartelette is filled with the ganache almost all the way to the top and left to stand for a short time so that the ganache can briefly set. Characteristic for the Swiss classic is the green surface with a dark center. This is created by colored melting fondant, which is applied with a piping bag. The center is applied with dark chocolate coating. Nowadays, the colors vary and so do the decorative elements. For example, you can cut out pretty flowers from fondant or marzipan. Even other shapes are used for the carac. Whether round, square, oval or even in the shape of a heart, get creative and make your own personal carac. Under our recipes blog you will find our carac recipe. You can also find various perforated cake rings in our online store, so that you lack nothing for the preparation at home.
Why should you use a perforated cake ring?
The perforated tart ring primarily ensures an evenly crispy dough. You have probably often noticed that your tart is dark at the bottom and very light at the edges. The dough has received too much heat in one place and too little at the edge. The perforated tart ring compensates for this imbalance and bakes your dough to a crisp. So you get a crispy crust that is not quite crumbly, but not brittle either.
What is the purpose of blind baking?
In blind baking, a dough is baked without filling. This base is then used to fill with ingredients that no longer need to be baked or that need to be baked at a very low level. The best known example is the fruit tart. Here the dough is blind baked and then filled with vanilla cream. Finally, the cake is covered with strawberries.
