Molding your own chocolate bars

A silicone chocolate mold is particularly suitable for beginners in chocolate bar making. Thanks to the flexible material, the finished bar can always be removed from the mold. So if you simply want to try making your own chocolate bars, this silicone mold is just right for you. When moulding chocolate bars, it is important to use high-quality couverture and to temper it correctly. This will ensure that the bar ends up nice and crisp and without any unsightly spots. 

You can temper either over a water bath or with a tempering device. Pour two thirds of the amount of chocolate you want to temper into the bowl and allow it to melt at 42°C. Once almost all the pieces have dissolved, add the last part of the couverture drops, which will cool the chocolate down to around 28°C. Now you just need to heat it to the optimum processing temperature of around 32°C and the chocolate is ready to use. Once the couverture has been tempered, make sure that the silicone mold is clean and dry. Now fill the individual cavities with chocolate. The easiest way to do this is with a piping bag. After filling, you can remove the excess chocolate with a spatula and put it back in your bowl. Now you have the option of sprinkling decorations such as dried flowers, sprinkles or nuts onto the chocolate. This allows you to create unique works of art that not only look beautiful, but also taste good. Now place the entire mold in the fridge for around 15 to 30 minutes. After the cooling time, take the hardened bars out of the fridge and remove them from the mold. And voilà, your very own chocolate bars are ready. 

Difference between silicone molds and polycarbonate

In contrast to molds made of polycarbonate, the chocolate bars with the silicone mold are not quite as shiny. Polycarbonate molds are the ones used in the professional sector. Silicone molds are well suited for beginners, as they are usually a little cheaper than the higher quality polycarbonate molds. However, if you have larger projects and also want to make more special bars with fillings, polycarbonate molds are more suitable. These molds are more stable and can be cleaned and polished more easily. Polishing gives the chocolate bars and figures a particularly beautiful shine at the end. 

Baked sweet or savory

Silicone is also ideal for baking. Sweet or savory motifs can be created by baking. Whether chocolate cake, marble cake or lemon cake. The silicone mold adapts to your personal taste. A cookie dough is also very suitable for the mold. You can make the batter sweet, with fruit or chocolate pieces, or savory. You can coat the sweet cakes with cake icing, for example, and then add sugar sprinkles on top. For the savory version, a cheese and ham bundt cake batter is ideal. Pour this into the cavities and bake at 180 degrees for 10-15 minutes. You can also color the dough with the Progel colors to give the motif a great effect. Be creative and try things out. Unlike metal baking tins, silicone tins cool down more quickly. This saves you time and you can process your delicacies more quickly. In contrast to rubber, silicone is inexpensive and resistant to chemicals and fungi. This makes the silicone mold a very hygienic kitchen aid. Thanks to the flexible and pliable surface structure of the silicone, all masses can be easily removed from the mold by bending and pulling. Although silicone is shatterproof and break-proof, it is not resistant to knives or other sharp objects. Therefore, only use plastic or silicone cutlery for this mold.

What do I need to consider when cleaning and caring for silicone molds?

Before use, you should place your silicone mold in a warm water bath with a little washing-up liquid. Although this is not necessary, it will contribute to the longevity of your silicone mold. The warm water with washing-up liquid closes the pores of the silicone surface better. This keeps the material flexible for longer and you can enjoy your mold for longer. After the silicone mold has been in the water bath for 5-10 minutes, you can now place it on a kitchen towel to drain. Try not to rub the mold dry with the kitchen towel. Silicone is a real lint catcher. As soon as the silicone mold is dry, you can use it straight away. Additional greasing is not necessary thanks to the non-stick coating. After you have baked your delicious cakes or poured chocolate, you can simply put the silicone mold in the dishwasher. Depending on how often you use the silicone mold, we recommend that you outgas your silicone mold 1-2 times a year. To do this, place the silicone mold in the middle of your oven at 200 degrees top/bottom heat for 4 hours. The heat ensures that accumulated substances in the silicone baking mold evaporate. From time to time, a white layer or white spots may form on the silicone mold. This is particularly common if you have not used the silicone mold for a long time. Simply place the mold in a water bath with washing-up liquid. This will easily remove the greasy film from the silicone mold and your mold can be used again without hesitation. Thanks to the flexibility of the material, the silicone molds can be folded up and stored to save space. Don't worry! The silicone mold will always return to its original shape, even after folding or bending. Say goodbye to bulky metal baking tins.
