Speculoos spice 45 g
Mix some Speculoos spice into the right cookie dough or into a dish, for example a Moroccan tagine, and you'll get an incredible variety of flavours. Cinnamon, coriander, anise, nutmeg, star anise, cloves and allspice are blended in the perfect ratio, creating a truly delicious mix for all your creations. The most well-known use is of course the speculoos biscuit itself, but there are many more ways to use and combine it.
Speculoos spice - how to use it
Spice Pralines
30 Praline shells or Hollow praline balls
70 g double cream
1-2 pinches of Speculoos spice
140 g Dark couverture
Bring the spice and the cream to the boil together. The spice should always be boiled first and not simply added as-is. Then pour the mixture over the couverture drops, wait briefly and stir slowly until no more lumps remain. Fill the Ganache into a Piping bag; once it has cooled slightly, you can fill the Praline shells with it, then seal and decorate with a little tempered couverture.
The powder also gives other treats the perfect touch of spice. Roll fresh churros in a mixture of sugar and Speculoos spice, or add a little of the powder to an apple compote. Once it has finished cooking down and cooled, you can layer it in glasses with a light quark or yoghurt cream and some crushed cookies or sponge fingers. This creates a wonderfully wintry dessert.
This little biscuit is a classic in Belgium, Germany, the Netherlands, northern France and Switzerland. Originally, the speculoos biscuit was handed out to children on 6 December, St Nicholas's Day. Today it is the ideal companion to a cup of coffee, a tiramisu or even a duck breast!
With this Speculoos Spice mix you can make your own speculoos and treat your friends and family to something special.
Use 1 teaspoon of the mix per kilo of dough.
The name "speculoos" has several origins. Some say the name comes from the Latin word "species" for spice. Others believe it derives from "Speculaas", a Dutch biscuit from the 17th century made with Indian spices.
