Letter cakes are familiar from birthdays, with numbers or initials. For Halloween, this one spells «BOO»: two layers of marbled shortcrust pastry with a fresh mascarpone lemon cream in between, skulls, pumpkins and spiders made of frozen cream around the edge, and a row of ghosts on top.
The letters don't require a special cookie cutter. The word is printed in the desired size, transferred onto transparent film and traced into the rolled-out dough with a toothpick. Then you cut along the lines.
The figures around the edge are made in a silicone mold: fill with cream, smooth the surface, freeze for twenty minutes. Frozen, they keep their shape when placed on the cake. The ghosts are simple cream dollops that get a face from three dots of chocolate.

Shortcrust pastry
1
Make the dough and chill it
Beat the soft butter with sugar, salt and vanilla for two to three minutes until light. Slowly pour in the beaten egg and fold in the flour only briefly.
Divide the dough into two halves and work the cocoa powder into one of them. Press both flat, wrap them in cling film and chill for one hour.

2
Marble and roll out
You need 110 g of dough per base. Place light and dark dough on top of each other, cut the piece and fold the halves together again until the marbling looks right. Do not knead, or the colours will blend completely.
Roll the dough out directly on baking paper between 5 mm rolling pin guides. On the paper you can move the letters later without them getting distorted.

Letter bases
1
Transfer the template
Print «BOO» so that the word is 28 cm long and 13 cm high. Place a transparent sheet over it and trace the letters with a foil pen.
Lay the sheet on the dough and go over the lines with a toothpick. This creates a fine groove along which you can cut after lifting off the sheet.

2
Cut out the letters
Trace the lines with a small, sharp knife, including the inner areas of the two O's, and pull the dough away all around. The leftovers are suitable for our Halloween chocolate biscuits.
Repeat everything for the second base.

3
Bake
Bake both bases on the baking paper for 12 minutes at 190 °C fan. Let them cool completely on the tray: while warm, the narrow parts of the letters are still soft and will break.
Mascarpone lemon cream
1
Whip cream
Whip the 200 g heavy cream until stiff and chill it.

2
Prepare the cream
Stir the mascarpone smooth with the sugar. Add the lemon juice, lemon zest and Vanilla cream powder and mix everything well. The cream powder binds the cream so it can be piped and frozen. Gently fold in the whipped cream at the end.

Halloween figures
1
Fill the molds and freeze
Pipe the cream into the cavities of the silicone mold with pumpkin, skull and spider, smooth it with the angled spatula and put the mold in the freezer for 20 minutes.
For 9 cavities you need about 50 g of cream. The cake carries 36 figures: four molds at the same time or four times one after another.

You need this for it
2
Remove the figures from the mold
Press the frozen figures out of the mold onto baking paper and put them back in the freezer until assembly.

3
Cream for the dots
Add the 30 g of heavy cream to the remaining cream and whip it briefly. This makes it slightly firmer so it holds the shape of the dots. Fill it into a piping bag with a round piping nozzle.
Assembling
1
First dots
Place the first sponge layer on a cake board and pipe dots close together over all the letters.

2
Figures and jam
Place the frozen figures around the edge, faces outwards. Pipe the jam from a cornet over the dots so that it peeks out slightly at the edges.

3
Smoothing and second sponge layer
Spread a thin layer of cream over it so that the second sponge layer sits evenly, then carefully place it on top.

4
Dots on top
Also pipe dots onto the top layer over all the letters. Hold the piping nozzle upright and pull it upwards: this gives the dots a point and the shape of little ghosts.

5
Ghost faces
Fill a cornet with some tempered dark couverture and pipe three elongated dots, two eyes and a mouth, onto each dot.

Storage & shelf life
The BOO cake tastes best on the day it is made. In the refrigerator it keeps until the next day, though the shortcrust pastry becomes softer. The bases can be baked two to three days in advance and stored in a tin.

To make sure it works every time
Work on the baking paper
Roll, cut and bake the letters on the same sheet of baking paper. Raw dough in letter shapes will distort as soon as you lift it.
Shapes well frozen
Only fully frozen shapes release cleanly from the mould. If a shape is still soft, give it five more minutes in the freezer.
Use up the dough scraps
Whatever is left over after cutting out the letters is enough for a batch of our Halloween chocolate biscuits.
Frequently asked questions
Yes. The method works with any letter and any number. Print the template at a similar size, then the quantities will match.
It binds the cream. Without it, the cream would become too soft when piping the dots, and the frozen shapes would lose their edges as they thaw.
The sponges can be baked two to three days ahead, and the shapes can be frozen the day before. Assemble only on the day itself so the shortcrust pastry stays crisp.
