A proving box gives your dough a sheltered place to rise without the surface drying out. Whether you call it a proving box, dough tray or dough box, it is a shallow container in which bread, pizza or Zopf dough can rest and develop. And if you would rather not leave the temperature to chance, there is also the Brod & Taylor dough proofer.

Proving boxes and proofer in our range

  • Proving box / dough tray: in three sizes – 39 x 29 x 6 cm, large with lid 40 x 30 x 10 cm and small with lid 30 x 20 x 10 cm.
  • Dough proofer: the Brod & Taylor FP-205, a folding proofer for bread that stores away neatly after use.
  • Accessories: the extra rack and the proofing tray for the FP-205.
  • For sourdough: the Brod & Taylor Sauerteig Home for your starter.

Tips from our bakery

The right size: the small box is enough for one loaf or a few pizza dough balls. For larger batches or several dough pieces side by side, choose the large dough tray.

Cold proving: with a lid, you can leave your dough to mature in the fridge overnight. It develops more flavour, and you can bake at a relaxed pace in the morning.

Proofer: it keeps the temperature steady – helpful in a cool kitchen and for sourdough, which likes warmth. You will find your starter under sourdough and yeast.

Frequently asked questions

What is the difference between a proving box and a banneton?

In the proving box, the whole dough rises before shaping. The shaped loaf then goes into a proving basket for its final rise, which gives it shape and pattern.

Do I need a dough proofer?

Not necessarily. But if you bake often or keep a sourdough starter, you will appreciate the consistent conditions. To see what a slowly fermented loaf can look like, try our country bread with wheat ear pattern. More equipment is waiting in our bread category.
