This Swiss cocoa powder is of the best quality and is ideal for the various applications. It consists of at least 20-22% cocoa butter and is really nice and fine. When using the cocoa powder, it is nevertheless recommended to sift it briefly, so that a nice fine distribution is guaranteed.
In sponge cake masses, assume a dosage of about 15% of the flour weight as a guideline and in ice cream about 10% of the total weight.
