Dear hibiscus fans, this hibiscus iced tea is just the thing for hot summer days! With its deep red colour and wonderfully floral, tart flavour, hibiscus tea turns into a sparkling refreshment in no time. We combine it with fresh berries and a hint of mint – so a simple cup of tea becomes a real summer highlight for your terrace, your balcony or the next garden party. You can adjust the tea entirely to your taste: sweetened with honey, refined with lemon, or with ginger for a spicy note. We'll show you step by step how it's done.

If you're in a hurry: the compact recipe card further down sums it all up.
1
Bring water to the boil and add hibiscus flowers
Bring 2 cups of water to the boil in a pot. As soon as it bubbles, take the pot off the heat – this prevents the delicate hibiscus flowers from turning bitter while steeping.
Add the dried hibiscus flowers directly to the hot water. You'll see the liquid immediately turn deep red – that's perfectly normal and shows you the flavours are releasing.

2
Steep and refine
Let the tea steep for 5 to 10 minutes. For a mild flavour, 5 minutes is enough; for a stronger tea, leave it a little longer.
Stir in honey, agave syrup or stevia to taste until you reach the sweetness you like. A splash of lemon or lime juice rounds off the flavour nicely.

3
Strain and serve
Pour the tea through a fine sieve into a container to remove the flower remnants. This leaves only the clear, aromatic liquid.
Fill glasses with ice cubes, add fresh berries and pour the cooled hibiscus tea over the top. Garnish with a few mint leaves and enjoy right away – hot or ice-cold, just as you like.

To make sure it turns out perfectly
Set the strength yourself
The longer you let the hibiscus flowers steep, the stronger the flavour becomes. For a milder tea 5 minutes is enough; for an intense flavour feel free to wait up to 10 minutes.
Perfect for meal prep
Prepare the tea the day before and let it infuse overnight in the fridge. That way you'll have a ready-made refreshment on hand the next day.
Creative variations
Experiment with ginger, cinnamon or peppermint for exciting flavours. The hibiscus tea also works wonderfully as a base for a non-alcoholic summer cocktail.

In the fridge, well covered, the tea keeps for up to 3 days. It tastes best, however, freshly prepared.
Yes, that works very well. Use 1–2 fresh flowers instead of the dried variety – the flavour is a little milder and more floral.
