To achieve the typical lye flavor and the beautiful brown crust, pretzels and rolls must be dipped in lye or coated with it very briefly before baking. As caustic soda is highly corrosive, we ask you to always wear safety goggles and chemical-resistant plastic gloves and to read the safety instructions below beforehand. You can produce over 12 liters of liquid lye with the lye beads at a 4 % concentration.

How to use lye beads

Do not use aluminium or wooden utensils, and wear protective equipment. Pour one litre of cold water into a lye-resistant container. You can now add 40 g of lye beads to the water. This will warm the water, allowing it to reach the optimum temperature of 30 °C naturally. Under no circumstances should you add the water to the lye beads, as this could cause a violent chemical reaction. The beads must be added to the cold water, not the other way round.

Dip the slightly dried dough pieces into the lye for a maximum of 4 seconds and leave them to drain on a lye cloth. You can also find suitable lye cloths in various sizes directly in our shop, should you need any more.

Purchase and delivery of the lye beads

In order to purchase the lye pearls, you must complete an age verification check during the checkout process, and the quantity per online purchase is limited to 2 tins of 500 g each. This is due to the maximum permitted shipping quantity set by the postal service.

Furthermore, the delivery will only be handed over to you in person, subject to a signature. Consequently, the delivery options for the Laugenperlen are more limited. The Laugenperlen may only be purchased by private individuals. Thank you very much for your understanding. Collection in Adliswil is possible with no quantity restrictions.

Storage and disposal

Store the lye beads in a dry, cool place, kept under lock and key and out of the reach of children and unauthorised persons.

Do not allow them to enter the drains or the environment. Dispose of any remaining product and the container at a collection point. Store lye pearls only in their original container.

Lye pearls for lye-baked goods, 500 g - Additional information and disposal

When using caustic soda beads, you must take sufficient care and wear protective equipment. Even when heavily diluted, caustic soda can still cause blindness if it comes into contact with the eyes, and it can cause chemical burns on the skin. You should therefore always wear safety goggles and chemical-resistant gloves, as well as a face shield and protective clothing.

Children must not be allowed in the kitchen whilst you are working with caustic soda; afterwards, the lye must be sealed tightly and put away so that children cannot access it.

Any leftover lye or lye beads can be handed in at your local collection point. Please hand these in in their original container. 

Lye pearls for lye-baked goods, 500 g - Instructions for use

To make a delicious pretzel roll or a traditional pretzel, you first need to prepare the dough. Once the rolls or pretzels have been shaped, the dough pieces are left uncovered on a lye cloth for a short while after the final proving. This allows them to dry out slightly and form a crust.

Once the shaped dough pieces have risen for approx. 20–30 minutes, they must be chilled in the fridge. This makes it easier to dip the pastries into the lye. The lye does not penetrate the pastries but remains on the surface.

Put on safety goggles, chemical-resistant gloves, and body and face protection. Make sure there are no children or unprotected people in the room. Now prepare the liquid lye from the lye pellets. Pour one litre of cold water into a lye-resistant container. You can then add 40 g of lye pellets to the water. This will warm the water, allowing it to reach the optimum temperature of 30 °C naturally. Under no circumstances should you add the water to the lye beads, as this could cause a violent chemical reaction. The beads are added to the cold water, not the other way round . Stir the lye solution gently for a moment and you’ll have your lye solution ready for your lye-baked goods.

Next, dip the slightly dried dough pieces one by one into the lye solution for a maximum of 4 seconds; it’s best to use a ladle for this. Allow the dipped dough pieces to drain briefly and place them on reusable baking paper. They would stick to ordinary baking paper. You can now sprinkle some pretzel salt over the pastries and bake them according to the recipe.

The lye-dipped rolls or pretzels are then baked straight away according to the recipe. 

Rinse the utensils used thoroughly; the lye can be neutralised with acids (citric acid, carbonic acid, acetic acid). Do not remove your safety goggles, gloves or protective clothing until the lye has been completely sealed away or washed off.

To make high-quality pretzels, you simply need the right lye during the production process. Unfortunately, baking soda and all the other products readily available in shops do not work quite the same way. Nor is the result in any way comparable; it simply does not meet the same quality standards.

As lye and lye beads pose certain risks, the dispensing and ordering process is therefore slightly more involved, but this is for your safety and that of those around you. 

We can guarantee that the effort is well worth it when you work with the right lye solution. Just take your time, follow the advice and work carefully, and you’ll be rewarded with perfect pastries.
