When we cut out the shapes for our Halloween marble cake, about a kilo of colourful cake is left over. Throwing it away is out of the question: crumbled and bound together, it becomes a whole gang of monsters.
The crumbs are bound in three ways. Ganache made from dark and milk couverture gives chocolate balls, white ganache with vanilla gives vanilla balls, and cream cheese with wild berry jam tastes like cheesecake. Because the crumbs are not too fine, the colours of the cake remain visible when you bite into them.
The balls are coated by hand in tempered couverture, so the coating is thin and even. Afterwards they are shaped into pumpkins, witches, spiders and mummies. No cake leftovers? The tips explain how you can bake the cake yourself quickly.

Step by Step

Shape the balls
1
Crumble the cake scraps
Crumble the cake scraps with your hands into coarse crumbs, about the size of a pea. Crumbs that are too fine make a pasty mass in which the colours disappear. Divide the crumbs evenly between three bowls, one for each flavour.

2
Chocolate balls
Bring the double cream to the boil, pour it over the dark and the Milk couverture, let both stand for a minute and stir to a smooth ganache. Mix it into the first bowl of crumbs until the mass holds together.
Scoop out 12 portions of about 42 g each with the ice cream scoop and roll them smooth between your palms. The scoop ensures that all balls are the same size and fit exactly into the moulds.

3
Vanilla balls
Scrape the seeds out of half a Vanilla pod, bring them to the boil with the cream and pour everything over the white couverture. Stir until smooth, mix into the second bowl of crumbs and shape another 12 balls.

4
Cheesecake balls
Mix cream cheese and wild berry jam into the third bowl of crumbs until the mass is compact, then shape 12 balls from it as well.

5
Chill
Place the balls in the fridge for 20 minutes. Cold, they keep their shape when you coat them, and the couverture sets faster on the cool surface.
Coat and decorate
1
Roll in couverture
Temper the couverture. Put on gloves, take a spoonful of couverture into your palm and roll each ball briefly in it. This creates a thin, even coating, much finer than dipping.

2
Roll in sprinkles and shavings
Roll the balls immediately while the couverture is still soft: in Halloween sprinkles, in dark chocolate shavings, in coconut shavings or in white chocolate shavings that you have coloured green or orange. Then place them in paper baking cups.

Design the monsters
Orange balls become pumpkins with a little sugar decoration, green ones become small witches. For spiders, pipe thin legs from tempered couverture using a piping bag onto baking paper, let them set firmly and insert them into the sides of the ball. Mummies get fine lines of white couverture and two Candy eyes.

Storage & shelf life
Because of the ganache and cream cheese, the monster cake pops belong in the refrigerator. In a sealed tin they keep there for three to four days. Take them out about 15 minutes before serving so the filling becomes creamy again.

To make sure they turn out perfectly
No cake leftovers?
Bake our Halloween marble cake and use the scraps from cutting out. Or mix a batter from 320 g flour, 200 g butter, 200 g sugar, 3 eggs, 200 ml milk, 8 g vanilla sugar and 15 g baking powder, divide it into thirds, colour it white, orange and purple, and fill a loaf tin with it in stripes. Bake at 180 °C convection for about 45 minutes and let it cool: this yields around 1 kg of cake.
Any cake works
Leftovers from a pound cake, a loaf cake or sponge work just as well. Only very moist cakes need slightly less ganache or cream cheese, otherwise the mixture becomes too soft.
Colouring the shavings properly
Colour white chocolate shavings only with powder color for chocolate: add the colour and shake well. Water-based food coloring does not bind with chocolate and leaves the shavings blotchy.
Frequently asked questions
Ours weigh 42 g each without decoration. The ice cream scoop makes them all the same size, and they fit neatly into mini paper baking cups.
Rolled in the palm of your hand, the couverture coating becomes thin and even, and excess chocolate does not drip off. Dipping often leaves a thick foot at the bottom.
For pumpkins and witches with coloured shavings, white couverture; for spiders and bats, dark couverture; for mummies, milk or dark couverture with white lines on top.
