Banana bread is moist, aromatic and perfect for using up ripe bananas – the riper the fruit, the more intense the flavour. It is actually a cake rather than a classic bread, since it is made with Baking powder. The recipe became popular in the USA in the 1930s, where it was originally used to make the most of overripe bananas and to save on food. Refined with crunchy Chocolate drops and warm spices such as cinnamon and Nutmeg, they turn into perfect little banana bread cakes for breakfast, a snack or a sweet break in between – and the next day they taste even better! This combination of banana and bread is a real classic.

40 gneutral oil (e.g. sunflower oil)

Mash the bananas with a fork or a potato masher until as smooth as possible – small pieces are perfectly fine. Then mix the bananas with a little lemon juice to give them a fresh note and keep their nice colour.

Now for the batter. Whisk the egg with brown sugar, white sugar and Vanilla into an even, creamy mixture – nothing needs to be whipped. Then add the melted butter, the oil and the bananas and stir everything together well. The combination of butter and oil keeps your little cakes especially aromatic and moist for longer.
In a second Bowl, mix White flour, Baking powder, salt, Cinnamon and Nutmeg and add this mixture to the batter. Stir everything only briefly – the batter may still be slightly lumpy. That's exactly how it stays nice and light and doesn't become too dense.

Finally, fold in the Chocolate drops. Fill the batter into the prepared moulds, about three-quarters full (approx. 100 g), so the mini banana breads can rise nicely while baking.

Bake the mini banana breads in a preheated oven at 180 °C top/bottom heat for about 30 to 35 minutes. Towards the end of the baking time, check with a wooden skewer whether they are done – it may still come out slightly moist, so the little cakes stay lovely and moist inside.
After baking, let the mini banana breads rest in the tin for about 10 minutes before carefully removing them and leaving them to cool completely on a Cake rack. They are already really delicious fresh, but the next day they become even moister and more aromatic.

Preparation
- Prepare the bananas: Mash the bananas and mix with a little lemon juice.
- Make the batter: Whisk the egg, sugar and Vanilla, then add butter, oil and bananas.
- Fold in the dry ingredients: Stir in the flour, Baking powder, salt, Cinnamon and Nutmeg only briefly, then fold in the Chocolate drops.
- Fill the moulds: Fill the moulds three-quarters full with batter (approx. 100 g per piece).

Storage & shelf life

So your banana bread turns out perfectly
Use the ripest bananas possible
The riper and browner the bananas, the more intense the flavour and the moister the little cakes. Perfect for making good use of overripe bananas.
Only stir the batter briefly
Stir the dry ingredients into the batter only briefly, until everything is just combined. A slightly lumpy batter is perfectly normal and keeps the little cakes nice and light.
Even better the next day
The mini banana breads already taste very good fresh, but only develop their full flavour and moistness the next day. Perfect for making ahead!
FAQ
Often it's because the bananas aren't ripe enough or the batter was stirred too long. Use bananas that are as soft and brown as possible and stir the dry ingredients in only briefly.
Yes, that works without any problems. Let them cool completely and freeze them well wrapped. To thaw, simply leave them at room temperature or warm them briefly in the oven.
Of course! You can simply leave out the Chocolate drops or replace them with nuts, berries or white chocolate.
