On warm summer days there is hardly anything nicer than a slice of fresh strawberry short cake. Airy sponge meets a heavenly custard cream. This fantastic duo is crowned with ripe, aromatic strawberries on top – light and fruity – just right for cosy afternoons. Whether over coffee with friends on the terrace or as a sweet finish to a summer day – this strawberry cake brings the sunshine to the table and is ideal for spoiling your guests.

Sponge (best the day before)

Why bake the day before?
It's best to bake the sponge the day before and wrap it in cling film. The sponge is much easier to cut a day later. If you're short on time, you can alternatively put the sponge in the freezer for half an hour.
Preheat the oven to 160 °C fan.

Eggs, water and sponge cake mix into the bowl
Put 170 g of eggs and 20 g of water into a Mixing bowl. Then add 230 g of Sponge cake mix.

Whip until light and airy and fill into the Cake ring
Whip everything until the mixture is nice and light.
Now fill the mixture into a Cake ring and spread it carefully. Smooth the sponge out flat all the way to the edge.

Bake, tap test, turn out and let cool
Slide the tray into the oven and bake the sponge for 15 minutes. To check whether it's baked through, press on it with your flat hand: if it no longer crackles, it's done. If it still crackles, leave it in for one more minute and then try again.
As soon as you've taken the sponge out of the oven, lay a sheet of baking paper over it, turn the whole thing over and let it cool on a Cake rack. This gives you a sponge that is flat on both sides.


Custard cream

Mix powder, water and vanilla
Put the powder with the water and a few drops of natural extract into a Bowl.

Whip for five minutes and let rest
Whip the mixture for about 5 minutes with a hand mixer or a stand mixer so that a smooth cream forms. Let the cream rest a little before use — this way it gains a bit more stability and creaminess.

Whip the cream stiff and fold in
Next, whip the cream until stiff and carefully fold it into the custard cream.



Layering the strawberry cake

Release the sponge
Once the sponge has cooled well, you can slowly peel off the baking paper. With a small Spatula or a knife without serrations, carefully release the sponge from the edge.

Cut into three bases
Now cut the sponge into three equally thick layers. You can do this with a bread knife — but it's easier with a Cake cutter.

Line the ring and layer
Line the Cake ring with a Cake insert strip. (The Cake base should be a bit smaller than the ring.) Now place the bottom sponge layer into the ring and cover it with a third of the custard cream. Repeat this with the next layer.

Add the top and press down
Smooth the custard cream nice and flat, place the top layer on it and gently press it down a little.

Remove the ring and peel off the strip
Now you can slowly remove the Cake ring and carefully peel off the cake strip.


Coating, almond rim and strawberry finish

Coat all around with cream
Now coat the cake all around with the remaining custard cream using a small Angled spatula.

Press on the almond rim
Put the roasted and cooled almond flakes onto a plate. Lift the cake carefully with an Angled spatula and take it onto your flat hand. Now you can press the almond flakes all around the edge.

Top with strawberries
Next, set the cake down again and decorate it with the strawberry halves.

Cook the cake glaze and brush it on
To make your cake really glow and shine, the Cake glaze should not be missing. For this, put it into a pan with a little water and 2 drops of Progel Red and boil it down well. As soon as the glaze has cooled, use a silicone brush to brush the strawberries. Now they gleam in a tempting red.

Chill for at least one hour
Before serving, put the cake in the fridge for at least one hour — this way the layers set and the cake can be cut cleanly.

- Sponge: Whip eggs, water and sponge cake mix until light, bake in the Cake ring for 15 minutes at 160 °C fan, turn out and let cool (best the day before).
- Custard cream: Whip powder with water and natural extract for 5 minutes, let rest, fold in stiffly whipped cream.
- Layer: Cut sponge into 3 bases, line the ring with the insert strip, alternately layer base and ⅓ cream each, press on the top.
- Coat: Remove ring and strip, coat the cake all around with the remaining cream.
- Decorate: Press almond flakes onto the edge, place strawberry halves on top, brush on the boiled-down red cake glaze.
- Chill: Put in the fridge for at least 1 hour.

Storage & shelf life
The strawberry cake keeps in a Cake box for up to three days in the fridge. It tastes best on the first and second day, as long as the strawberries are still fresh and glossy.

The sponge wants a day's head start
Freshly baked sponge crumbles when cut. Baked the day before and wrapped in cling film, it can be divided cleanly into three bases — if you're in a hurry, put it in the freezer for 30 minutes instead.
The crackle test
Whether the sponge is done is revealed by your flat hand: press gently on it — if it still crackles, it needs another minute. More reliable than any skewer test with this thin base.

Lay on baking paper, turn over, let cool on the cake rack: this way the sponge becomes flat on both sides and the cake is straight later.
