Whip up the parfait mixture
1
Whip the egg yolk mixture
Put the egg yolk, icing sugar and vanilla seeds into a Bowl and whip with the mixer until pale and airy. The mixture should clearly increase in volume — this is the basis for the creamy texture of your parfait.

2
Fold in the cream
Carefully fold the already whipped full cream into the egg yolk mixture with a Dough scraper. Work in portions and always stir from the bottom up. This keeps the mixture nice and airy and stops it going runny — that is exactly what makes the difference between a light parfait and a heavy cream.

3
Add the hazelnuts
Roughly chop the caramelised hazelnuts with a knife and mix them into the mixture. Stir well until everything is evenly distributed. The little pieces later provide the typical crunchy bite in every portion.

4
Fill the moulds
Fill the mixture into a Piping bag and pipe it into the Donut silicone moulds — about 50 g per mould. This makes 12 pieces. The ring shape is ideal for placing the Caramel cream in the centre later.

Unmould and decorate the hazelnut caramel parfait
1
Freeze
Into the freezer with them! Let them set for at least a few hours, ideally overnight. Only when the mixture is really firm will it release cleanly from the mould later.
2
Unmould and fill
Once the parfaits are firm, release them from the mould. Fill the hollow in the centre — where the donut shape leaves its characteristic indentation — with the Caramel cream. This is easiest again with a Piping bag, for a clean and even filling.

Decorate
Decorate with more caramelised hazelnuts and a Dark chocolate couverture. The contrast between the creamy parfait, crunchy nuts and intense chocolate makes this dessert a real highlight.

Storage & shelf life
Without decoration, the parfait keeps well wrapped for up to 3-4 weeks in the freezer – make sure to cover it airtight so it does not develop freezer burn or absorb odours.
Once decorated with caramel cream and chocolate Ganache, it is best enjoyed within 3-5 days — this keeps the texture and flavour of the filling at their best.

To make it succeed every time
Whip the egg yolk mixture properly
For the perfect texture, whip the egg yolk with the icing sugar until really nice and pale and airy.
Fold in the cream gently
When folding in the cream, go gently: you can stir the first portion in vigorously, but fold in the rest only carefully so the mixture stays nice and light.
Chop the hazelnuts coarsely
Do not chop the caramelised hazelnuts too finely — small, crunchy pieces give the perfect bite.
FAQ
Allow at least 4-6 hours, but ideally overnight. That way the mixture becomes really firm and releases cleanly from the silicone moulds.
Of course, you can use almonds or pecans, for example. Just make sure they are also caramelised — that provides the necessary crunch and the right sweetness in the dessert.
Yes, that is exactly the clever part of this recipe! Thanks to the airily whipped egg yolk mixture and the folded-in cream, you do not need an ice cream maker.
