The Bündner nut tart is a tart where everything has to be right down to the millimetre, and that is exactly what makes it so beautiful. Under a short nut dough with vanilla cream powder sits a chewy caramel with walnuts that glistens when you cut into it. Anyone who wants to make the nut tart themselves needs above all three rings and two rolling pins: then base, filling and lid fit together so precisely that no caramel escapes. And because it keeps for a long time, it also makes a wonderful gift from the kitchen.

Nut dough

Beat butter and icing sugar
Beat 175 g butter with 65 g icing sugar until fluffy and clearly lighter in colour. Then add 20 g liquid full cream and a pinch of salt and stir briefly.

Mix in flour and cream powder
Mix 240 g White flour with 25 g Vanilla cream powder and add both to the butter mixture. Work it only until the dough can be pressed together. The cream powder makes the nut dough especially crumbly.

Chill the dough flat
Press the dough together briefly on the work surface and wrap it as flat and square as possible in cling film. Place it in the fridge for about 1 hour. Chilled flat, it can later be rolled out much more evenly.



Caramel with walnuts

Caramelise sugar and glucose syrup
Put 50 g granulated sugar and 60 g glucose syrup into a pan and melt them over medium heat, stirring constantly with the mixing spatula. Keep cooking until both together take on a lovely golden brown colour.

Deglaze and bring to a boil
Deglaze the caramel with 60 g butter. Then add 25 g milk, 2 pinches of salt, the vanilla and 25 g honey and let everything come briefly to a boil until the mixture becomes thicker and more viscous.

Mix in walnuts and shape
Mix in 100 g chopped walnuts and immediately fill the mixture into a round silicone mold Ø 14 cm. Smooth it out and let it rest in the fridge for about 15 minutes.



Assembling the Bündner Nusstorte

Prepare the cake ring
Grease a 3.5 cm high, perforated cake ring Ø 15 cm completely with soft butter and dust it with flour. Place it on a sheet of baking paper. This way the cake comes out of the ring cleanly after baking.

Roll out and line the base
Roll out the dough between rolling guides to exactly 5 mm and cut out a circle with a ring Ø 18 cm. Lift it into the cake ring with a cake disc and press first the base, then the edge firmly, without air in the corners.

Insert the caramel
Release the chilled caramel from the silicone mold and place it in the centre of the dough. Press it down lightly. At 14 cm it fits exactly into the lined ring.

Cut out the lid
Roll out the remaining dough again to 5 mm and cut out the lid with a ring Ø 14 cm. Brush the dough edge above the caramel with water so the lid holds well.

Seal the edge with the pastry wheel
Place the lid on top and press it down lightly all around. Then run the fluted pastry wheel around the edge: this joins the lid and edge firmly and creates the typical grooved pattern.

Prick and bake
Prick the lid several times with a fork. Bake the Bündner Nusstorte at 190 °C fan oven for approx. 30 minutes. Let it cool in the ring and only then unmould it.

- Base: Roll out dough to 5 mm, cut out Ø 18 cm, line the ring.
- Fill: Place caramel in the centre, press down lightly.
- Lid: Roll out the remaining dough to 5 mm, cut out Ø 14 cm, brush the edge with water.
- Seal: Place the lid on top, press down the edge with the pastry wheel.
- Bake: Prick, bake for 30 min. at 190 °C fan, let cool in the ring.

Storage & shelf life
At room temperature, covered with cling film or packed in a tart box, the Grisons nut tart keeps for several weeks. Well wrapped and frozen, up to three months.

So it turns out perfectly every time
15 cm minus 2 × 5 mm
The ring measures 15 cm, the pastry at the edge is 5 mm thick on both sides. That leaves exactly 14 cm inside, which is why the caramel and lid are shaped to 14 cm. Anyone wanting to make the nut tart themselves should know this calculation, otherwise gaps remain.
Pour the caramel with walnuts in straight away
As soon as the nuts are mixed in, the caramel with walnuts sets quickly. So pour it into the tin at once and smooth it out while it is still soft.
The Pastry wheel instead of the fork
Traditionally the edge of the Engadine nut tart is pressed with a fork. With a grooved Pastry wheel it goes faster, the edge is sealed firmly and the grooves are even all the way around.
Frequently asked questions
Yes. The tart comes from the Engadine in Graubünden, which is why both names are common. It always refers to the tart made from shortcrust pastry with a filling of caramel and walnuts.
It is possible, but harder. The whole recipe is built on a 5 mm dough thickness: if the dough is thicker or thinner, the caramel and lid no longer fit exactly into the ring. The guides ensure the dough is the same thickness everywhere.
Very much so. The nut tart tastes even rounder after a few days, because the flavours of the pastry and caramel come together. Well wrapped in a tart box, it makes an ideal gift from the kitchen.
