Baking the lemon cupcakes

Preheat the oven and insert the baking cups
Preheat your oven to 175 °C and place the paper baking cups into your cupcake baking tin. This step is important so your cupcakes stay stable and bake evenly.

Activate the lemon zest in the sugar
Put the sugar together with the lemon zest into a bowl and rub both together between your fingers. This releases the essential oils from the peel and makes the lemon aroma noticeably more intense. Then add the soft butter and the olive oil and beat the mixture for about two to three minutes until it becomes lighter and creamy.

Add the eggs and liquid ingredients
Now add the eggs one at a time, stirring each one in well so an even mixture forms. In a separate bowl, combine yoghurt, milk, lemon juice and natural extract and then add this mixture to the batter.

Fold in flour, baking powder and salt
Then add the flour, baking powder and salt. Fold in the dry ingredients only until a smooth batter forms. Be careful not to overmix, so your cupcakes stay nice and soft and airy.

Fill the cups and bake
Fill the batter into the prepared baking cups, about three-quarters full, and bake the cupcakes for around 18 to 20 minutes. After baking, let them cool completely before working with them further.

Beat the cream cheese frosting
While your cupcakes cool completely, prepare the cream cheese in the meantime. Beat the butter together with the cream cheese into a smooth mixture. Then add the icing sugar, the lemon juice and a little lemon zest and mix briefly until a creamy, stable consistency forms. Be careful not to beat the mixture too long, so it stays nice and firm.

Fill the cupcakes with Lemon cream
Once the cupcakes are cold, use an apple corer or a small spoon to cut a hole in the centre and fill it generously with the miniSchoggi Lemon cream. For an even more intense effect, you can lightly level the surface and make a small hollow again to add some extra cream on top.

Then pipe the frosting onto your cupcakes as you like. We opted for a simple, round shape and deliberately put the focus on the Lemon cream. Finally, decorate your cupcakes with edible flowers, which give a fresh and elegant look.

Storage & shelf life
You can keep the finished lemon cupcakes fresh, well covered, in the fridge for 2 to 3 days. Take them out about 20 minutes before serving – cold, the frosting tastes less aromatic.
Unfilled and without frosting, the cupcakes can also be frozen: well wrapped, they keep for around a month.
